Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

On tap at Spuytin. Wine glass pour. Clear, deep, yellow gold body. Smells of apples & brown sugar. old-school butterscotch candies. Minerally, semi-sweet, moderately tannic, carbonic, macerated apple flavor. Same apples as their ice cider is seems. Okay, if a bit messy.

Bottle at the October DC Ratebeer tasting. Poured a clear golden color with a small wispy head. Aroma was light apples, tart green apples. Light woody notes.

Bottle at the October DC Ratebeer tasting. Poured a light yellow color, still with a small fizzy head. Aroma was apples with some toffee and butterscotch aroma. Flavor is similar. sweet finish.

750 ml bottle. A tad cloudy for a cider, a bit of sediment. Pretty high carbonation, acidic notes but nice apple character. Very dry texture. Not my favorite from this Cidery but not bad.

75CL. loads of gorgeous sparkling wine appearance. light golden color. nice bubbly appearance. Smells WONDERFUL. wow. Nice job! Spritzy 7-up style carbonation, tasty, bubbly, dry in nature. lovely apple flavor with a bit of cranberry. gorgeous and far better than my standard Eden Sparkling cider!!

Let's just start by saying this needs a few more years of aging. without a doubt. Sat this upright in a fridge at 35F for 2 months, opened the top and it gushes everywhere. Lost half of the bottle. Clear, lots of alcohol legs, The carbonation is great. very champagne like. very funky. oyster and mushroom?
