Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Bottle received through the Eden Ice Cider club. Pours clear deep amber leaving some thick legs on the glass with a swirl. Smell is intense with a ripe complex mix of sweet apples, caramel, toffee, raisins, prunes, leather, moist wood, black cherries and calvados. Taste is sweet, sour and heavy fruity. Mouthfeel is soft, viscous, oily, round, tart, tiny tannic astringent, slightly boozy and near full bodied. Finish is sweet and sour with complex oxidized apples and raisins, overripe citrus fruits, caramel, wood, leather, soil and calvados. Crazy rich and intense. Oxidized in a fine sherry way. Bottle sample at Red Hen. Crystal clear golden amber color. Floral fruit aroma. Taste is sweet, complex, fruity but not overly sweet. Very tasty.

2 oz pour (I assume from bottle) at ANXO courtesy of the waiter/bartender, thanks! Paired nicely with a basque cake with peach compote. Clear golden amber. Aromas of honey, apples, booze, syrup. Tastes of apples, honey, booze, caramel, spice, syrup. Light body with a dry and slightly syrupy finish. Nice end to the night.

6 oz pour on draft at ANXO. Mostly clear golden yellow. Aromas of apples, light booze, honey. Tastes of apples, tartness, peppery spice, light booze. Light body with a very dry finish.

Bottle bought through the Eden cider club. Pours tiny sparkling pale golden with a small fizzy goldenish white head that quickly dissipates without leaving any trace on the glass. Smell is fruity with tart apples, star fruit, minerals and lemon peal. Taste is fruity. Mouthfeel is sparkling, dry, very tiny tart and light bodied. Finish is fruity with tart apples, star fruit, paper and mineral water. Heavy sparkling, tiny papery but also decently fruity. Smell is fruity and tiny funky with tart apples, pineapple, star fruit, hay, dry soil, paper, leather and lemon peal. Taste is very tiny sour, fruity and very tiny funky. Mouthfeel is flat, dry, slightly tart, tannic astringent and light bodied. Finish is slightly sour with tart apples, star fruit, hay, dry soil and lemon peal. Smell is fruity and herbal with tart apples, basil, oregano, rosemary, minerals, lemon peal and alcohol. Taste is tiny sour, slightly bitter, fruity and herbal. Mouthfeel is dry, slightly tart, tiny astringent, boozy and medium bodied. Finish is sour and slightly bitter with tart apples, savoury bitter green herbs, hay, minerals, lemon peal and alcohol. Very dry and very strong. Kinda hard to muster. Tried it with lime like it was recommended on the bottle which really managed to bring the herbs, fruit and alcohol together. Draft at ANXO. Hazy bright yellow color. Aroma of fruit and light sulphur, subtle funk. Taste is a nice balance betwen funk and sweet fruit. Tasty.
