Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Light reddish yellow color. Has the Eden dry aroma with just a hint of grape and melon. Good mouthfeel. Currant Clem’s on strong at the middle and stays through the finish which is slightly bitter. Apples take a backseat and you do get a small level of the boozing as.

On-site @ Eden: Cloudy reddish orange with sediment. Intense is one way to put it. CinnamonC sage, turmeric and Apple tastes like a lemon like cola with ginger and pepper. It’s sour almost. Refreshing with a gin like finish

On-site @ Eden: Light yellow. A little sediment. Smells like a salad. Lots of herbs. Clover, pepper, intense. Juniper berry, honey, light Apple. This has a lot of flavor. It’s actually unique and very good I’m a fan.

On-site @ Eden: Gold in color. Liquer aroma with peach and brown sugar. This is intense in taste. Like the sweetest cider I’ve had but it’s very good. Apple brandy is present, a little alcohol burn and lingering finish.

On-site @ Eden: A little hazy yellow color. Apple, mango and wood aroma. Sweeter than regular dry. Some tropical fruit, w bit of apple juice sweetness with a yeast and oak finish

Amber color. A nice sweet Ice Cider, with lean caramelized fruit feeling, and some pleasant astringency and acidity in the final to balance the sweetness.
Not overly complex, but well made and definitively a very fine one.

Bottles received through the Eden Ice Cider Club. Labeled 2011NS201 and 2013NS101. Pours clear amber leaving some prominent legs on the glass. Smell is heavy fruity with concentrated apple must, caramel, toffee, charred wood, vanilla, hay, minerals, lemon peal and hints of apple pie spices. Taste is sweet, sour and heavy fruity. mouthfeel is round, heavy oily, tart and near full bodied. Finish is sweet and sour with concentrated apple must, raisins, caramel, charred wood, hay, minerals, lemon peal and alcohol. 2011NS201 provides even deeper caramel and raisins notes with leather and fat concentrated sweet and tart apples. 2013NS101 is good but 2011NS201 is plain amazing! --- Beer merged from original tick of Northern Spy on 16 Jan 2016 at 18:25 - Score: 8.
