Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Gargled @ Astor Wines. Appeared to me as a ever so slightly drier version of their base ice cider infused with herbs. Clear, golden, deep. I felt the apple flavors in this one were more flabby & muddled. Herbs shot out front. Thought it was thyme, was corrected & told it was basil. Sweet but heavy handed on the herbs. Some citrus, honey, boiled apples, ...grappa-ish? Alcohol wasn’t much of a concern though. Stickier mouthfeel then their others, though not as thick of course. Still way sweet. Dry? Whatever. Way too powerful to do anything but mix or cook with, which is what they suggested.

Sampled @ Astor Wines. My favorite newly discovered apple varietal this week. Clear, orange maple/amber color. Very still, very leggy. Smells of bold, compact apples, maple, & a touch of vanilla & something veggy. One side is full of honey & gummy bears flavors. The other is full of tart, juicy apples, with a hard, acidic punch. It cuts it well. A bit hot. Suckling sweet, with a strong, potent, woodsy edge. Invigorating.

Sampled @ Astor Wines. Vibrant gold, excellent clarity. Smells of macerated skins, stems, meaty apples, & sweet citrus acidity. Bit of heat. Taste is intensely sweet, with a constant prick of acidity. Apples become a bit bolder as it progresses. Runny texture. A bit leafy, a bit rindy almost, though never quite cutting the everlasting sweetness. Hot, honey finish.

Bottle picked up at Artesano Mead. Pours a clear syrupy gold with no head whatsoever. Aroma is full of rich apple with a bit of tartness and a bit of citrus and flora backing. Flavor begins with sweet apples but it has a bit of tartness that comes out in the finish with a bit of caramel and maple backing. Quite rich.

Hazy deep blond color. Nice aroma of apples and citrusy acidity; fruity and fresh, wonderful. The body is agile, although a good amount of sugars are left; the citrusy acidity is prominent, followed by the flavor of apple juice (no stewed apples); balanced aggressiveness. Lovely.
Tasted side to side, fresher and more dynamic than the Northern Spy; easier to drink.

Bottled. A golden cider. The aroma has notes of apples and wood. The flavor is sweet and acidic with strong notes of apples and juice, leading to a tart finish. Thanks yespr for sharing this.

37.5 cL bottle.Pours clear and golden orange with no head. Aroma is smooth fruity and crisp apple. Smooth, fruity,citrusy and crisp apple fruity.Fruity and smooth,slight wooden.Lingering wineous.Sweet and slowly fruity. Stunning -thanks to Shaun for this.
