Amber colour, a bit dull. Mild aroma: alcohol, milk chocolate. Medium sweetness, a bit too hot; chocolate/cacao character, light maraschino cherries, feels like oxidation
Chaotic.

375ml @ Matt's parents' place with a scenic view. Appearance: clear copper. Aroma: not pleasant mix of tons of yeasts with tons of nuts. Taste: along the same lines, very sweet. Overall: BAD, it didn't completely work for me.

375mL bottle, pours a clear dark chestnut brown/amber. Aroma is full of wildflower honey, toasted nuts, vanilla beans, and plenty of cocoa nibs. Flavour is not actually that sweet -- there's toasted hazelnuts, cocoa nibs, fermented out honey, and some oak. Quite boozy, but the adjuncts are decently coherent. Not a top-tier mead by any means, but it's solid.

Poured from 375mL bottle (batch nr. 1). Clear blonde with no head. Floral honey, orange blossom, not a ton of honey. Okay.

375ml @ Matt's parents' place with a scenic view. Appearance: almost clear blonde with no head. Aroma: sweet, weird chemical and yeasty characters that are covered by the sweetness. Taste: along the same lines. Overall: still not digging this style enough to be interested in buying its representatives.

375mL bottle, pours a clear pale golden blonde. Nose is full of orange blossom, wildflower honey, and some bees wax. Flavour is fairly hot, with plenty of wildflower honey, orange blossom, a little bees wax, and plenty of warming alcohol. Very warming and nice use of the honey, though I'd prefer a higher honey-to-water ratio. Not the most complex mead, but it's very nicely made.

330mL bottle, pours a clear pale blonde / essentially a clear colour with an aggressive, medium white head. Nose is quite spicy and floral, with plenty of bees wax, gentle thyme, and floral notes in general. Flavour is sweet, seltzery, floral and light spicy. The honey is nicely sweet, imparting a bees wax character. The spices come through more as a floral character. I don't really detect any pronounced thyme; perhaps the angelica is what contributes the floral character. Pleasant and above average for a session mead, but not all that interesting to me.
