Description
This Victorian property was originally home to the Cannon Brewery, which closed during World War I. It was later home to a Greene King pub called The St Edmunds Head, which closed in the early 1990s. The St Edmundsbury Record Office shows Pat and Liz Spillane purchased the property from Greene King in 1994, renovated the buildings, and reopened as The Old Cannon Brewery in December 1999.

The seven barrel brewplant is situated in a room above the bar, by the bar and in the pub cellars.

Cask: Poured a golden with white head. Aroma is light grain. This one is nice refreshing summer drinking hote gold. Lots of grains and underlying sweet malts.

Cask at The Foresters, Church Crookham. Slightly sour edged malt aroma. Mesium brown. Creamy but blotchy off-white. Bitter with a sour edge. Some underlying sweet caramel. Light-medium bodied. Slick. Average. Abrupt finish. OK but nothing to write home about.

500ml Bottle - Black in colour. Berries, roasted malt and some slightly soapy notes in the aroma. Blackcurrant, cherries, chocolate, vanilla and some soapy hints in the taste. A tasty yet hoppier than average mild.

Cask @ GBBF 2017. Pours a pale amber color with a small off-white head. Has a fruity malty weak hoppy caramel aroma. Fruity malty weak hoppy caramel flavor. Has a fruity malty caramel hoppy finish.

Cask: Poured a golden with white head. Aroma was fruit, citrus and light. Taste was pleasant hote cask gold, citrus, fruity, balancing malts, zesty finish.

Cask: Poured a burgundy color with a thin white head. Aroma is citrus and malt. Taste was tangy and leafy.

Cask at the Old Cannon Brewery, Bury St Edmunds. Pours very dark brown with minimal off-white to grey head. Aroma of sour berries, apples, chocolate and roasted malt. Medium sweetness, medium bitterness, very light sour to taste. Medium body, oily texture, flat carbonation. Described as a stout elsewhere and it's more a stout than a mild, and after the initial surprise of the (by design) sour, this became the best of the 3 on today's taster board.

Cask at the Old Cannon Brewery, Bury St Edmunds. Pours clear dark gold with a small off-white head. Aroma of hop, citrus, caramel, hint of blackberry and leaves. Medium plus sweetness, light to moderate bitterness. Medium body, oily texture, soft to flat carbonation.
