Description
We strive to produce dry, vintage, wild-fermented and barrel-aged ciders using the traditional methods of Europe and New England – from the rich and bountiful organically grown fruits of Oregon.

Baird & Dewar Farmhouse Cider was started slowly and quietly in the fall of 2011 as an extension of Zeb Dewar’s home cidermaking, with the intention of bringing traditional small-batch vintage farmhouse-style cider to the northwest.

Zeb has made cider for over 17 years, working for over 10 years as a cellar hand, assistant winemaker, and harvest manager at premium Willamette Valley and Columbia Gorge wineries. He has been making cider from the apples grown at Baird Family Orchard for more than eight years.

Trevor Baird is a highly regarded second generation farmer and fruit grower, whose peaches, cherries, and apples are used by many of Portland’s finest restaurants and breweries.

We currently have no tasting room and are not open to the public. This is a micro-business and a labor of love. It is our mission to grow and produce interesting, honest, subtle, traditional, and unique vintage ciders, with respect for the craft, the planet, and the people we work with, and to have fun doing it. Single can via Press online. Clear Solo cup at home, post hurricane. Faintly hazy, bubbly, dusty pale gold. Yeasty, cheesy, funky papaya, saline, gum, vinegar nose. Not great. Dry floral, bittersharp macerated apples, yeasty, vinegar sweetness. Medium high acid, medium low tartness, heavy sulfite feels. American Sidra. Just okay.

Tap @ De Garde Brewery, Tillamook. I'm guessing all these years should be aliased. Pours misty yellow, bright sour apple funk on the nose. Crisp, bright sour funk complexities overall, light tart apple some woody oak moments with a lingering tangy acidity. Very good.

On tap at Schilling Cider House - PDX, pours a clear blonde, no head. Nose smells like peppermint, with little else. Flavour is loaded with dental floss, with mint, and crisp apple. This is just bad, with too much dental floss. Ugh... unpleasant.

On tap at Bushwhacker - Brooklyn, pours a clear blonde with no head. Nose brings out a nice farmhouse funky quality, with gentle acidity and high dryness. Flavour is dry and fairly funky, with apple skins, medium acidity and farmhouse funk. Not overly complex; in fact, lacking depth. It's decent but uninspiring.

Tasting at Ferris’, corked bottle n. 1562
Pale yellow color, cloudy, headless. Nice aroma, sour, lemony, a bit funky, a bit footy. Very dry, weak mouthfeel; some funky flavors, but also some plastic, make of this an imprecise cider.
Not elegant. American.

Bottle - A bit of wild sour apple. Cloudy gold with no head. Funky, Apple, yeasty notes and a dry funky finish. Nice.

On tap at De Garde. Pours a cloudy yellow color with a small bubble of head. A big sweet woody sour nose. Oak, sour tannins, vanilla, spices. Interesting. Hard to pin down.

Bottle - Sweet Apple and kambucha like notes. Cloudy yellow. Funky Apple and that odd kambucha like flavour again. I think the spice and raisins give it that interesting flavour without being entirely recognizable.

2012 vintage. Bottle at De Garde, pours a cloudy blonde with a small white head. Aroma is complex, with brown sugar, treacle, and light oak. Flavour is totally different, with medium dry apples, slight toffee, wild farmhouse funk, and fairly high acidity. The acidity is much too high after a while - it hurts the insides. It's good but harsh.

On tap at The Commons, pours a hazy reddish pink with a small pink head. Aroma brings out tart black cherries and light funk. Flavour is pretty funky, with dirty tart black cherries, medium funk and a little acidity. Well-balanced and fairly complex. Very nice stuff.
