Description
We want to make wine for Nordic cuisine.
Fruit wine - well worth noting!
Although we can grow Rondo, Solaris and other grapes in Denmark, it will be difficult for us to compete with Germany and France when the quality and economy must match.
This is not the case with fruit wine.
Because we grow some of the world's best fruit in Denmark. The fluctuating temperatures during the growing season and not least between day and night, because the fruit gives a high acid content.
And the acid is just the most interesting thing with a winemaker's glasses.
These are fruity wines with lots of acid and fine fruit in the nose and taste.
Ideal companions for Nordic cuisine.

Bottled. A yellow cider with a beige head. The aroma has notes of elderflowers and spices. The flavor is sweet with notes elderflowers ans apples, leading to a dry finish.

75 cl clear bottle. Pours clear and golden yellow with a small white head. Herbal elderflower. Mild citric and fruity apples. Dry, apples and herbal. Citric dry finish.

shared by yespr, clear yellow, huge fluffy bubbly head. aroma is pretty herbal, chopped trees with leaves, sort of. not much apple or pear. flavor is pear, apple, spicy notes, very spicy and bitter ,but also nice notes from pear and apple.

Bottled. A yellow cider with a rim of beige head. The aroma has notes of apples and alcohol. The flavor is sweet with notes of spruce, apples, and flowers, leading to a tart finish.

75 cl bottle. Pours clear and golden yellow, no lasting head. Aroma is herbal, vegetables and light fruity. Carbonated. Fruity, spiced and herbal. Sweet, kild citric and herbal pine. Lasting spiced and slight herbal finish.

Bottle @ Foodfestival, 11.5% Clear pale yellow with no head. Aroma is apples, fruit and pine needels. Flavour is apples, pine needels, medium sweet, fruit and a little sulfur.

Deep blond color, sun gold. Some sweetness and acidity in the aroma, some iced apple, but lighter than I’m used to. Good sweetness and acidity level, good apple flavor. Again, not as complex as the Canadian ones, and a bit better than the regular Malus Danica. Keep doing it.

Deep blond color, sun gold. Some sweetness and acidity in the aroma, some iced apple, but lighter than I’m used to, and some white wine. Quite sweet and with a reasonable degree of acidity, both traits not as extreme as in the Canadian ones; some good flavor of acidic sweet apple juice.
Good, in general lacking a bit of depth though.
