Audible CO² explosion at opening to towering, just yellow head, very stable over very Champenoise pearling amber-ochre beer. Milky, faintly spicy nose, (more than a) tad of yeast/fresh bread, and, indeed, white wine-liek, peaches. Sourish - as in wine - malty, spicy and a bit of yeastesters. There’s something pretty oxydated there as well, though it isn’t all-pervading - yet, old cookies. Very spritzy feel, quite grist-like slickness, medium bodied. YEP! Another one that desperately craves to be an Ersatz-Champagne, instead of being a good beer.
