Description
Formerly known as 'La Face Cachée De La Pomme' and 'Domaine Neige' but those names no longer legally belong to François Pouliot. But this is the same orchard where the original ice cider producer continues his business after losing his trademark names in a legel settlement with his former business partners.

bottle at the cidery - This tasty cider reminds me of a dry to semi-dry white wine and would be good with food. It’s a still cider with tasty, tart apples and is very easy to drink.

bottle at the cidery - This cider is bubbly like a champagne and has a rich green apple aroma. It tastes semi-sweet with the flavor of fresh apples and is very enjoyable. With a price that’s pretty low for a wine or champagne, I wish this comparable cider was available here.

200 mL bottle courtesy of JulienHuxley. Thanks! Had this for dessert after Christmas dinner. Pours a clear copper color with no head but some legs. Aroma of intense apples... sweet, mealy, syrupy and tart, brown sugar and vanilla. The taste is concentrated apple, both sweet and tart, apple skins, brown sugar, pear, pineapple and a light bitterness. Medium bodied. Very nice.

Bottled. An amber ice cider with no head. The aroma has notes of apples, sirup, alcohol. The flavor is sweet alcohol, apples, spices, and sirup, leading to a dry alcoholic finish. Thanks fiulijn for sharing.

Bottle shared by Jay at tasting at my house. Pours sparkly clear gold with white fizzy head. Nose/taste of McIntosh apples, pear, light tartness, champagne yeast and some good buttery notes. Good champagne like carbonation. Medium body. Dryish finish.

Alex (fiulijn) got me enough to rate. ENORMOUS thanks! Poured a lovely full golden body. The nose was marzipan punschrullar, chocolate and apples. Wow! Sweet taste but not overly so. Marzipan, chocolate, apple, some vague typical cider funk in the background. Rosewater? Shit this is good. More than I expected!

From bottle as Neige Éternelle, courtesy of fiulijn. Pours clear and golden orange, no head. Light curtains on the glass when swirled. Aroma is dense apples, sweet, light sugarish and with a mild acidic touch. Mild citric, sweet, dense apple and smooth. Velvet. Goes into a sweet, smooth and yet light crisp citric touch into the finish.

2015-03-25, tasting at Matt’s, vintage 2009, 6 years old, 10% ABV, 8-5-9-5-18
Pefect balance of sugars and acids.
2011-09-02, corked bottle from L’Epicerie, Paris, as Neige Éternelle; Recolte 2004, 7 years old; 9-5-9-5-18=46
Gold color; it pours viscous. Deep, warming aroma of apples and stewed apples, with light citrus acidity, English apple pie, mature pineapple, and a trace of hazelnuts. Thick body, velvety mouthfeel; powerful and syrupy apple juice flavor, with just accents of caramelization; there is a high acidity that perfectly balances the sugars, a touch of pineapple too, and the delicate fruitiness of ripe strawberries; complex and balanced. The final is warming, sweet, acidic, long.
Excellent.

Bottle: Poured a medium yellow color cider. Aroma of sweet apple pie is really interesting and enjoyable and more sweet then most regular cider. Texture is lighter then most ice cider and is close to a regular cider. This is a great middle point between drinking a ice cider for taste but looking for a lower ABV.
