Description
Formerly known as 'La Face Cachée De La Pomme' and 'Domaine Neige' but those names no longer legally belong to François Pouliot. But this is the same orchard where the original ice cider producer continues his business after losing his trademark names in a legel settlement with his former business partners.

Uniform orange-golden, clear liquid. Apples wafting up from metres away, but with a fine spicy aroma, as from sage, and old, crinckled fruit and some exotic sugar. Sweet-sourish delicate fruittaste. Apples - of course - the essence of apple. Apple juice concentrated - which is what it is. Old wine barrels, as from Sauternes. Superb, really. Would be great with foie gras. Un très grand merci à glouglouburp

375mL bottle shared by Paul, thanks man. How do I rate this stuff, its awesome, sweet and tastes like apple. But not like a regular cider does. The apple is sweet, lightly rotten, almost a McIntosh -like apple. It is a bit rummy and has a liqueur-like feel to it.

2005 edition shared graciously at the Pittsburgh tasting 2009 from sir Mr Chopin, thanks Kev! Parafin and purfumy apple cider aroma. Plain old yellow and clear. Sweet and yummy yet nothing artificial about these flavors. Hides any alky content rather well. Very nifty aged or almost rotten apple taste in a tremendously good way. Very friendly and easy going. No carbonation. Lovely and delicious. Wow, glad to have had the chance at this one. Alky is certainly in there but so what. Finish is apply rich sweet candy. A little viscous on the palate. Very nice and enjoyable overall experience. THIS STUFF ROCKS.

Corked bottle; harvest 2006, 3 years old
Deep yellow color; a lot of micro bubbles cover the sides and bottom of the glass. The aroma is intense; there is some sour apple, jam, but also plastic (as often happens in ciders) and very light hazelnut, orchid flowers. Good mouthfeel, just sweet enough; concentrated fruit flavor, apricot jam, with a sharp acid background; the sweetness, acidity and alcohol are in good balance. Very interesting and complex.
