Description
We started a Brewery as a means to contribute to a truly artisan craft. We believe in friendship before finance and are happy to help others in this industry as we have been helped by those who came before us. We are bold believers in the fact that a well made beer can cool your spirit and warm your soul.
Our flagship Mason Ale Works production brewery opened in 2017 at our San Marcos Urge Common House Location. Here JJ “Sweet Meat” Jimenez, our Director of Brewing Operations, helms the wheel. All of our can releases like our popular Jambi West Coast IPA and Respeto Mexican Lager are brewed and canned in these four walls. We also crank out an extensive line-up of one-off releases out of here.

US Pint can on 5th April 2026, drank at our Air B&B, in Fallbrook. Jet black with a tanned topping. This is a rich decedent Stout in every way, lush sweet coffee and vanilla oozing through it's bourbon booziness, really enjoyed it.

Black pour. Thin foam around the rim. Rich flavor of dark chocolate, bourbon, vanilla, and coffee. Bourbon on the palate.

Cocoa, coffee, charred oak, bourbon aroma. Viscous black pour, headless. Bourbon, chocolate syrup. Oak finish. Full body, easy carbonation, very warm. This is a punch in the face. No detectable hazelnut flavor or aroma, but that is likely due to the bourbon. It's not overly boozy but even a little bourbon seems to have masked the delicate flavor of hazelnuts. It's a shame because I really hazelnuts, especially in coffee. Good beer though.

Can shared with Tim. Yellow color, no head. Aroma is artificial citrusy it seems. Flavor is lightly malts, again it tastes to me as some sort of artificial citrusy and a bit sugary too. Odd. Fanta lemon-ish. Meh. Not a fan.

One more of the IPAs I steadily get from Half Time in NY. In front of me is a 16 can now opened and pouring inside of a SH Belgian glass. The appearance is an opaque, amber-yellow body carrying a skim of fully white foam. I smell tropical and citrus along with a hint of hops. The taste has grapefruit, orange peel, dry crackers and still that small hoppiness. Slightly sweet and bitter both. Decent beer, not shaking anything up. Interesting artwork on the label for sure.

Sample from can @ Bratislavka tasting. No real head. Colour is gold, hazy. Aroma is very hoppy, citrus, tropical fruits, bit alkohol. Taste is full malty base, mellow tropical fruits, more on the sweet side, alcohol is masked, decent bitterness, good one, fully enjoyed
