De grondslag van de brouwerij bestaat eruit dat wij al onze bieren zelf bedenken, brouwen en bottelen. Op die manier hebben we zelf de controle over de kwaliteit van onze bieren. We staan ook zelf in voor de ontwikkeling van nieuwe bieren en de verfijning van ons bestaand gamma.

Saying that this new Limburg brewery's output so far is uninspired, is an understatement: after the dubbel and the tripel, here is the blonde. Thick, foamy, tightly plaster-like lacing, egg-white, pillowy, stable head on an initially crystal clear, warm 'metallic' deep old-golden beer with lively sparkling, turning misty and a bit more orangey with sediment. Aroma of banana mush, white bread dough, soapy coriander seed, fried red apple, ripe peach, fresh camomile, an unfortunate whiff of DMS (overcooked broccoli), cloves, hints of ginger, orange flesh and orange peel (probably curaçao being used as a flavouring), pumice, damp earth. Estery onset, clear banana ester mingled with ripe peach, cooked apple and pear impressions, sweet, lively carbonated with minerally effect; slick but rather 'full' body, honeyish residual sugar sweetness thickly draped over a pleasantly bready maltiness, soapy towards the end especially when the coriander effect sets in, but ending with lingering floral and mildly peppery hop bitterness, honeyish sweetness, estery fruitiness, clove-like phenols and that citrus peel aspect returning. The DMS is weak enough to disturb only orthonasally for those who are sensitive to it (like me) but does not manage to ruin the beer retronasally - so I can more or less overlook this off-flavour, considering that in its basic structure and execution, this is clearly the best of the three Herck beers; it does, however, remain a completely predictable, redundant run-of-the-mill sweet and accessible blonde for the masses.

33cl bottle from Prik & Tik Dranken Marlou. F: thin, white, not long lasting. C: gold, hazy. A: malty, orange peels, spicy, bit honey, fruity, banana. T: medium malty base, banana, orange peels, spicy, bit bready, medium carbonation, not bad, enjoyed.

33cl bottle from Prik & Tik Dranken Marlou. F: medium, white, quick diminishing. C: pale gold, hazy. A: malty, bready, orange peels, bit banana, honey, bit yeasty, pear. T: full malty base, orange peels, banana, bready, bit herbal, some harsh bitterness, coriander, honey, soft to medium carbonation, not very good for the style, partially enjoyed.

The dubbel in this young microbrewery's trinity of blond-dubbel-tripel, steinie bottle from the brewery itself. Medium thick but quickly opening and thinning, yellowish pale beige head, loudly fizzing head eventually all but disappearing over a cloudy caramel brown beer with 'dirty' burgundy hue, looking a bit muddy in the end. Aroma of old brown bread, damp tree leaves, caramel, coriander powder, cooked apple, medlar, light bubblegum, clove, vague background hints of manure, rotting potatoes, DMS and thyme. Fruity onset, sweet but not too cloying, some candi sugar sprinkled over medlar, apple peel and banana impressions, fizzy carbonation with minerally effects (yet, as described above, incapable of maintaining the head), rounded body, sourish undertone with a somewhat 'dirty' edge; caramelly and brown-bready malts, straightforward and sweetened by remnants of candi sugariness which in itself is balanced by this underlying dim sourishness. Old coriander seed powder in the end, paired with a tea-ish herbal hop touch that offers little bitterness; yeasty spicy effects of clove and nutmeg, paired with lingering sweet 'overripe' fruitiness as well as this sourish 'dirtiness'. Teeming with off-flavours and not looking very pretty with its 'badly bound' carbon dioxide and lack of head retention, this feels like an amateur brew concocted in somebody's kitchen - not a beer I would release onto the market in our time and age. The tripel in this series was not all bad, but this one certainly needs work. Oh well, I guess I can still use the leftover bottles of this one in my Flemish stew or something...

New microbrewery in the province of Limburg, brewing a blonde, a dubbel and a tripel - it doesn't get a lot more cliché than that here in Belgium... Mousy, snow white, thinning and opening but otherwise well-retaining head on a cloudy peach blonde beer with warm orangey tinge. Aroma of actual wort, bread dough, crumbled Betterfood cookies, dried apricot, Doyenné pear, peach, dried orange peel touch, some light coriander seed, banana, moist white pepper, melon, honey. Estery onset, banana mingled with peach, melon and apricot, medium carb, lots of honey-like residual sugar over a very fluffy, bready malt sweet base, Betterfood springing to mind again as well as cake crumbles, something apple- or even cider-like tucked away in the finish along with mild coriander and orange peel spicy notes, lots of lingering honeyish and malty sweetness till the end; brief floral hop touch offering little bitterness, while the alcohol admittedly remains well hidden and yeasty effects, though present as breadiness and fruitiness, never become overly 'dirty'. Quite well made from a technical viewpoint, but simplistic, sweet, overly accessible and redundant, like so many other tripels these days.
