Our brewing focus is on the modern beer styles we love to drink, share and seek out. Top of the list are hazy and juicy hop-forward IPAs--big on flavour and low on bitterness. We also love brewing and drinking big pastry stouts that feature dessert-like flavours such as coffee, chocolate, coconut and maple syrup. We round out our lineup with fun and exploratory sour beers where we experiment with different flavour combinations through large fruit additions and other complementary ingredients. Our goal is to turn each of our beers into a memorable experience.

(473ml can from Eric, thanks!) Pours a hazy dark gold with a tight white head and lots of lace. Aroma of floral and rather creamy tropical and pit fruit like plum, passionfruit, lychee and guava, with accents of navel orange and grapefruit peels and some sweet brioche cereals. Flavour is off-dry and even lightly tart with floral pithy tropical fruit, some lychee, and light guava muskiness, candied citrus and berry undertones, bready malt core, quite light resin into the semi-dry fruity slightly tart floral finish. Medium bodied, fluffy, very soft carbonation. A little unusual for an all-Galaxy IPA in its profile, but it's a pretty nice-drinking brew nevertheless.

Can: Poured a cloudy/hazy yellow/beige color ale with a large foamy head with good retention and some lacing. Aroma of green leafy hops with some citrusy notes and dry hops notes is enjoyable. Taste is also a great mix of citrusy hoppy notes with some leafy hops notes, floral undertones and a dry finish. Body is full with limited filtration and with good carbonation with some fusel alcohol notes perceptible. Enjoyable NEIPA but could eb slightly cleaner with less fusel alcohol notes.

473mL can, courtesy of wilco (thanks Mike!), pours an opaque cloudy muddy orange with a medium white head. Nose is quite pithy, with pithy stone fruits, some yeast, earthy hops, and a touch of dankness. Flavour follows as expected, with lots of juicy stone fruits, resinous hops, some fusels, and a tropical character. Really really chalky mouthfeel, with pronounced bitterness. I didn't think Third Moon made chalky hazies like this... yuck. Bad.

(473ml can from Eric, thanks!) Pours fairly cloudy deep gold with a thick white head and lace. Aroma of apricot, canned peach and mixed citrus with slight dank edges and a little odd booze twang. Flavour rather matches the nose, being very dry and built around soft bready cereals with soft notes of apricot and other pit fruit, light tropical florals, a little orange and grapefruit peel, bone dry and kind of bready malt quality in the finish with very low citrus bitterness and some kind of alcohol/chemical twang. Light to medium bodied, a little watery with barely any carb. Odd, this isn't close to the standard of the few Third Moon hops I've tried so far. I know it's not a super fresh can but I did expect more, something about the process in this beer feels off.

473mL can, courtesy of wilco (thanks Mike!), pours a totally opaque, peachy orange with a large white head. Nose is absurdly fruity, with all sorts of pithy stone fruit goodness, tropical notes, resinous hops, and a bit of yeast. Flavour is tropical fruit juice galore, with loads of juicy mango and peach, some citrus rinds, citrus and resinous hops, and stone fruit pith. That is incredibly juicy, with just enough pithy and hoppy bitterness. Doesn't have the usual chalkiness of many hazies. The clarity isn't quite as impressive as some of Third Moon's other hazies, but this is a damn nice tropical stone fruit juice bomb. Very good.

Aroma of huge hoppy undertones with some citrusy notes and juicy hops notes with light fusel notes also perceptible. Taste is also a mix of juicy hops notes with huge floral undertones and citrusy and tropical notes with some residual sugar notes. Body is full with limited filtration and good carbonation with light fusel alcohol notes also perceptible. Quiet impressive tasting NEIPA but less fusel notes would have been even better.

500ml directly from the source (thx, Chris.!) at Matt's amenity room. Appearance: very dark brown with a weak beige head. Aroma: lots of coffee, slight fruitiness, some sweetness. Taste: along the same lines, bitterness coming from coffee. Overall: good coffee stout.

Not sure the Sinai connection. They growing coffee in Sinai now? Lots of coffee, some sweet molasses notes, so it's quite rich. Big coffee aroma. I like the burliness of this.

500mL bottle, pours black with a small tan head. Aroma is loaded with intense dark roasted coffee, some hearty oats, and a hint of sweetness. Flavour is hearty, with a very hearty oatmeal character, lots of dark roasted coffee, and a touch of sweetness. Hearty and coffee-dominated, with not too much residual sweentess. This is the kind of imperial stout I could easily drink a litre of. Not the most complex, but it's certainly well-brewed. Excellent.
