Description
St. Joseph's Abbey in Spencer, Massachusetts, is home to a community of Trappist monks and the first American Trappist brewery. Following the Benedictine tradition of ora et labora (prayer and work), the monks pursue a simple life of contemplative prayer, manual labor and hospitality. The brewery helps support the monks and their charitable outreach. The brewery, being far into the abbey's land, is not open to the public for tours or tastings.

Bottle. Deep reddish brown with a pale beige head that fades to a cm or so. Aroma of dough, brown sugar, prunes, ginger, mace, woody herbs. Only medium bodied and a bit creamy with modest carbonation. Fairly sweet with nicely rounding bitterness and fairly heavy spices. The malt side of things is pleasant but lacks a real bottom end rumble for something this strong (although there's a bit of warmth). Pretty good though.

Jet black pour with a thin light beige head that recedes steadily to a film. Small patches of lace. Aroma of roast malt, chocolate and anise. Medium body with flavors of slightly smokey malt, bittersweet chocolate and touches of fruit and earthy hops. The finish is roasty with a malty aftertaste. Pretty good overall.
