Very dark brown colour. Large head. Sweet, malty, lightly spicy (nutmeg) aroma with hints of peach and splashes of vanilla. Warm, malty, soft but effervescent body. Dark fruity overtones and alcoholic undertones. Quite a bit of sugars remain, and the finish has a tart fruitiness that while not especially enjoyable on its own, does seem to indicate along with the residual sugars a half-finished beer. Which, of course, it is.

Draft. Amber beer with a big white head. Nice spicey/yeasty aroma - corriander, pepper and noble hops. great complex flavor - pepper, spice, lemon, malt, yeast, and an underlying sweetness. Not as dry as most saisons, but its very good. Had the bottled version too and it was a major disapointment in comparison - lemon flavor was over the top, and the complexity wasn’t there - would have been a low 3 in that rating.

Draft. Hazy amber beer with a nice white head. Huge citrus aroma. Nice caramel/toffee malt backing a big citrus/fruit flavor. Refreshing for style. Nice bitterness.

RSBG 2005. Pitch Black color, dark brown head. Good mix of hops and malts in the nose with milk chocolate, cotton candy and sweet apples. Big sweet start with big carbonation, big chocolatey mouth and an almost acidic coffee like lasting finish. Too big and not well balanced, but still interesting.

Cloudy light amber. Very fizzy, giving it a big head that can’t hold. Leathery, kumquaty, pineappley aroma. Very well attentuated body. A little too fizzy - like with the Cisco beers it gets in the way of the flavours. I guess that means it’s already had too much time in the bottle. At this point, there is a rather dusty character, with more pineapple notes. It’s not terribly complex for all its bretty rusticity. Tart, thin, dry finish. It wins points for being interesting, and having good moments, but structurally it can’t hold a candle to the North Korean lager I tasted before it, let alone Sanctification.

Noogfest Hazy amber color with a small head. The aroma was musty and cheesy. The flavor was much better than the aroma and was nciely sour and pleasant. On the tongue, this had an oily feel and there was a bit of astringency in the finish.

Cloudy copper pour with minimal head, low carbonation - caramel, clove and spice in the aroma - flavor is very sour, with some grain and fruits way in the background- not sweetness at all - bitter, almost salty finish - something about this tastes off, perhaps it is infected, but it doesn’t quite taste like other infected beers I’ve had - something is just off, and I’m not sure if this beer is supposed to taste this way - I would advise the brewers to stop using green bottles.

[At GABF 2004] A hazy yellow beer with a small white head. The aroma is lovely sour, but lacks complexity. The flavor is sour with notes of lemon and metal, and leading to a dry end. Compared to the hype surrounding this beer, I was disappointed - there is nothing wrong with the beer, to me it is just ordinary. I later had it bottled with the same experience.

An unclear bronze beer with a nice white head. The aroma is sour from the wild fermentation - nice. The flavor is sweet and yet at the same time sour from the wild fermentation - the primary notes is from oranges and lemon, but the body is a little thin.

[At GABF 2004] A clear orange beer with an orange head. The aroma is sweet hoppy combined with notes of grass. The flavor is primarily grassy with the alcohol burning in the mouth. Nice but a little simple and a little too much alcohol.
