Description
We’re a small independent cidery founded in 2014 in Conon Bridge on the Black Isle just north of Inverness. This is our exploration of cider at its northern frontier. The aim for our cider is to reflect as far as possible our local Highland terroir.
We use every locally grown apple we can get our hands on whether they’re grown in gardens or orchards, sharp cookers, juicy eaters or bitter wee cider apples, we find a use for them all. Our cider apple orchards are among the most northerly in Europe and provide us the perfect starting point for all our blends.
We only ever ferment freshly pressed juice using wild yeast found naturally on the apples and in the cidery itself. We both ferment and mature in oak barrels at ambient temperature. This ensures a cold, slow fermentation which tracks the natural weather fluctuations as we head through the winter and into spring, it’s not uncommon during the depths of winter for the juice to freeze solid for a few days at a time. With Every vintage bringing it’s own unique character the barrels are blended by taste to produce our individual ciders or are set aside for one of our single cask bottlings.

Bottle: Poured an orange coppery translucent with a frothy white head. Aroma is crisp apples, very natural. Taste is fresh crisp apples, tangy, dry finish.

750ml bottle from Aeble. Golden colour, no head and aroma of vanilla, oak, apple, wood barrel. Taste is tart, tangy, woody, appley, fruity, with oak barrel and vanilla notes, some acidity and tannin. Medium bodied, low carbonation, drying oaky tart & tannic finish. Nicely drinkable.

750ml bottle from Aeble. Hazed yellow golden colour, short-lived white foam head and aroma of tropical fruit, wood barrel, citrus, solventy funk. Taste is fruity, wood barrel, coconut, vanilla, pineapple, citric rind, funky, with some acidity & light tannins. Medium bodied, light carbonation, dry fruity tart & tannic finish. Nicely drinkable.

500ml can from John O'Groats Brewery Tap - Clear gold body, short lived white top. Good old fashioned dry scrumpy vibe from the off, tangy apple, bit of crab apple, surprisingly fizzy, good clean sharp cheek puckering ending.

2022 Vintage: 750ml bottle from Cork & Cask. Hazed yellow colour, no head and aroma of apple, fruity, citric. Taste is apple, fleshy, fruity, zesty, citrus, with some acidity. Medium bodied, light carbonation, dry zingy acidic finish. Nicely drinkable.

750ml bottle from Oban Beer Seller. Pale yellow golden colour, some short-lived bubbles on top and aroma of apple, ripe fruit. Taste is tangy, tart, fleshy apple, fruity, citric lemony, juicy fruit salad hints, with wood barrel notes and some acidity. Medium bodied, low carbonation, drying mellow acidic finish. Nicely drinkable.

3/9/2024. Bottle shared by danlo, cheers Ed! Pours clear pale gold with a small bubbly white head. Aroma is mucky, solvent, apple, citrus, straw, tropical edge. Medium sweetness, light bitterness and tartness. Moderate body, soft carbonation. Dry tannic finish. Aroma evolves very nicely. Liked this.

Panda at home, thanks to Ed Danlo, 23/08/24. Almost clear golden with a fast escaping white cap. Nose is gunky apple, herb, light wood must, tarte apple skins. Taste comprises bitter sweet apple, tannins, modest acidic ripple, grass, vanilla, herb, hedgerow, light orchard wood, apple pulp. Medium bodied, moderate carbonation, drying close. Solid.
