Description
David and Lisa Walsh-Kemmis set up Ballykilcavan Brewing Company on their tillage farm at Ballykilcavan, Stradbally, Co. Laois in 2016.
Ballykilcavan Farm has been the home of our family for 13 generations. We have lived and worked here since 1639, and diversification has always been important to keep our farm viable for future generations. When I took over Ballykilcavan from my father in 2004, my motivation was to try to sustain it so that someone else would be able to take it over from me.
Our brewery is installed in the original stone grainstore for the farm, which was built in around 1780. In previous centuries, the building was used to store barley and oats after harvest, and then to mill them for bread making, feeding animals and maybe even making beer. Like most of the buildings in the 240-year-old farmyard, it is too small for modern farm equipment, but it is the perfect size to fit a small craft brewery.

44cl can from Auchan Kirchberg in Luxembourg. F: medium, tanned, good retention. C: dark brown, hazy. A: rich malty, caramel, maple syrup, dark dried fruits, nutty, dried fruits. T: full malty base, roasted tones, dark fruits, coffee, bit herbal, bit caramel, nice long lasting, bitterness, nutty, maple syrup, soft carbonation, good one for the style, enjoyed.

Taste is medium malty base, toast, bit roasted, caramel, leaves, citrus, nice balanced harmonic bitterness, medium carbonation, very good for the style, enjoyed.

Aroma is roasted tones, chocolate, coffee, cocoa, bit herbal, toast, bit caramel, dark fruits. Taste is medium malty base, roasted tones, coffee, herbal, bit cocoa, dark fruits touch, long lasting harmonic bitterness, medium carbonation, good balanced for the style, enjoyed for sure.

Panda 🐼 at home big thanks to Colin. A clear amber orange coloured pour with a loose off white head. Aroma is semi sweet, mealy woody apple, light funk, hedgerow hop. Flavour is composed of nutty bready malts, hedgerow hops, mealy, chalk, wet grass, Palate is crisp, chalky, fine carbonation. meh.

Bottle at home, from Yards & Crafts online, 21/05/23. Almost clear copper pour with a good sized lasting white head. Nose is grassy, pale and biscuit malt, fruit rinds, straw. Taste comprises straw, grains, orange peel, big mineral bite, lemon rind. Medium bodied, fine carbonation, semi drying close splashed with modest hop bitterness. Passable pale ... a touch raw and unpolished.

Can at the April DC Ratebeer tasting. Poured a kind of hazy, murky orange color with a medium sized white head. Aroma was coconut, light floral notes. Grassy, with orange, lime peel.
