Description
Created with ingredients farmed and foraged in the Pacific Northwest. Fermented with our house blend of wild and feral yeasts and bacterias.

On tap at Fair Isle, pours a clear pale peachy pink with a medium white head. Aroma has bright ginger, rustic saison yeast, and oak. Flavour is much the same, with subtle ginger, pink peppercorn, and rustic saison yeast. The adjuncts are incorporated very successfully here, finishing dry and buggy. Excellent.

On tap at Fair Isle, pours a clear dark amber with a small beige head. Aroma has gentle oak, subtle red wine tannins, and rustic notes. Flavour has tons of red wine tannins, oak, and rustic saison yeast. Tannic, oak, and buggy in great cohesion. Excellent.

On tap at Fair Isle, pours a deep dark mahogany with a small pink head. Aroma is full of really pithy cherries, gentle oak, and rustic saison yeast. Flavour is tart, with lots of intensely tart and deep pitted cherries, some bugs, and light oak. Intense tart cherries that work real well. Very good.

On tap at Fair Isle, pours a hazy bright golden with a small white head. Aroma reveals plenty of smokiness, with rustic saison yeast, oak, and subtle pear skins. Flavour is vibrant, with lots of smoked pears, rustic saison head, and oak in wonderful cohesion. The smoked pears are incorporated perfectly here. Excellent.

On tap at Fair Isle, pours a clear pale golden with a small white head. Aroma is full of farmhouse funk, rustic saison yeast, and some earthiness from the mushrooms. Flavour is moderately acidic, with citrus, some earth fungal notes, rustic saison yeast, and moderate funk. Carbonation is fittingly high, finishing rustic and citric. Unique and wonderfully constructed.

Smells fantastic as I'm pouring. Just dripping with rich, lovely, authentic, Dupont-like Sacch and gentle oak. Rustic grain with a healthy dose of honey and cracker-like character. Pear, apple, black pepper, with none of the unwanted stuff whatsoever (banana, clove, white pepper, bubble gum).
Flavor mimics the excellent nose nicely. Gentle but ample acidity balancing a chewy, wheat-like texture with good malt depth and attenuation. Complex, balanced, flavorful, Belgian saison that doesn't go overboard on the mixed culture or oak.
