Bottle, mail order from the brewery. Pours a pale, slightly hazy gold with a low, bubbly head and mild effervescence. Nose is lemony, grapefruit hops, slightly minerally, less fart / manure than the first time we tried it and thus nicer but there is still some there. Some rice and barley graininess. Flavor starts sweet and estery then dries out quickly, with citrus, grain, biscuits, some kind of sweet tart in the mid palate, and a bit of lingering fart. There is some appealing tangy sweet-and-sour thing going on but the finish is a bit dull and lethargic. This has potential but needs work. The whole idea of making beer with koji instead of malt has been begging for someone to try in Japan. Somehow I feel these brewers don't really know how to make sake though. They need to get that down first, and then play with the hops a bit more.

Bottle from the brewery. This is a sake-inspired ale made without malt. It uses unmalted wheat, rice, and rice koji. An interesting new approach, but so far I haven't been impressed with the others. Grapefruit nose, some white peaches, wheat biscuits, rice, soft, nice fruit, mild sake-like spices and light vanilla notes. Very pale pastel yellow, cloudy, with lace. Very creamy, fruity flavor. Vanilla, milk, grapefruit, orange, peach. This one is very nice. So different to the others which both had fecal notes and weirdness. Cidery notes as well, but not exactly, something like perry too. This is not all that sake-like, to tell the truth, even though it is pretty much a hopped and wheated sparkling sake. It even uses #9 Ginjo yeast. The finish is a bit muddled, not as bad as the others, but it could use some cleaning up. Body is light, with low carbonation. Could use some stiffening. All-on-all, this one finally shows potential for arriving at something new and special.

Super pale straw gold with a bizarre Smokey fart aroma. Light bodied and very dry with a strange flavor. Quite bizarre. I was the outlier trying this who found it kind of ok.

Bottle. Nose is grapefruit zest, rice, orange, something lightly funk and just a bit unpleasant and fecal--something from the koji, I suspect. Flavor is very fruity, with sweet peach, melon, apple, grapefruit pith, and a dusty note. Also grape juice and pineapple. The finish is a bit funky and bitter. There is a bit of sake-like esters in there. Not very beery, extremely light in flavor and I would suppose very delicate. Drinkable, but I am not very impressed. If they think it's a cool thing to make beer without malt, just using koji, they'll have to do better than this.
