Lorraine, a crossroads in Europe and a hillside region, has a rich fruit heritage, which I wish to highlight through my cuvées. The diversity of species and varieties in Lorraine orchards offers a wide taste palette. This peasant heritage is at the heart of my work. My travels allowed me to understand arboriculture in the broad sense, then more particularly the breeding of ciders and reinforced in me the idea of terroirs. This awareness and my experiences made me want to create the cider house in Reillon, the village that saw me grow up.
I manually harvest the fruits of the region in traditional high-stem orchards. The musts are then extracted in Reillon, where I carry out the fermentations exclusively on wild yeasts after settling of the lees. I regulate the main fermentation by light filtration and underdrawing and I do not use sulphites. Following bottling, a second fermentation produces natural effervescence after several months of aging.

Pours slightly hazy golden with good head and lacing. Some apple peel, some tartness. Quite pleasant for a cider. Bottle at DC Beer share.

750ml I acquired at Be Hoppy in Madrid. Sweet nose. Apples. Flowers. Clear. Big apple. Demi sec, so it's off dry. Refreshing though. I think everyone wanted a bit more though. 6 7 8 7 7

Bottle at the DCBeer May share. Poured a really nice, mostly still yellow, with a light orange hue to it. Aroma was big apples. Light tarn apple. Pleasant, and delicate.

Bottle. Clear bright golden, looks lovely. Floral apple, soft chalk, dry cellar, dry apple peel, leather. Light sweet and less bitter and sour. Solid medium bodied, over medium dry. Not super outspoken or fruity, but an interesting and well made cider.

Bottle shared. A bit hazy golden. Crisp fresh apple, light citrus, apricot, light mineral and funky. Quite fruity. Medium sweet and light tart. Medium dry. Pretty decent subtle cider.

Bottle. Bit hazy cider. Very aromatic fresh cut apple, rose, pomegranate, pear, dry green apple, light mineral. Light sweet and bitter. Body is still a little thin, you can tell this is not a classic French west coast cider, but it’s tasty and drinkeable.
