Gypse Haus Meads is a small batch meadery in Council, Idaho specializing in malomels utilizing local ingredients.

We have always believed in the old saying that we must live life to the fullest. The Gypse is here to do just that. Gypse Haus Meads serves as a vessel to share our passion for mead, Idaho, and all things deliciously wild!

Bottle at Doug's Christmas party. Pours clear straw yellow, no head or lacing. Honey, strawberry, rhubarb. Ok

Bottle from Toby. Pale golden , flat, clear. Aroma seems more apple than plum, Honey. Taste is plum, sweet, honey and finishes with a glowing warmth.

750ml bottle pours out pale straw. Nose is sweet honey nice plum kick. Taste is more of the nice sweet plums and a honey kick.

750ml bottle pours out pale straw. Nose is sweet honey light berries and some wine notes. Taste is more of the light berries some wine notes and a little honey.

Bottle from Toby. Pale golden pour, still, looks like White wine. Strong aroma of honey. Taste is honey too, not much strawberry or rhubarb.

Bottle at share. Aroma has the honey prominent. Minor elderberry notes. Fruity, but too sweet.

750ml bottle thanks to toby pours out crisp clean golden. Nose is nice sweet honey apple kick a little sulfur but it fades with time. Taste is more of the apple forward note light honey sweetness a little more on the wine side. Pretty good can't wait to try the others.
