Laurence Zigliara has a doctorate in educational science, her thesis topic deals with learning to wine. She transposed her knowledge of this universe to that of beer. She appealed in a friendly way, in addition to her taste buds, to those of Pierre Guigui, former wine editor at GaultMillau, founder and director of the Concours Amphore, International Competition for organic wines and in conversion.

Good for health and for the environment, all the ingredients of the Mousse are organic and the malt is biodynamic. Organic is the only production method that guarantees minimal pollution to the environment in order to produce a healthy drink, without any chemical residue. Biodynamics is an organic cultivation practice which, moreover, allows the plant to find its balance while strengthening its own defenses.

The focus is of making beers that can pair with food, and this, using biodynamic ingredients, which is a first in France. Pierre sources his biodynamic malt in Germany, that's the only place you can find it. He uses 3 different hops, no American or NZ hops. He use Opal hops from Germany, also Strisselspalt from Alsace and the 3rd is Saaz.

Bottle in Paris. Smooth fresh yeasty mild beginning. Lots of carbonation, very smooth. Hints of spices, ginger in the aftertaste, hints of lemon in the body. Nice smooth witbier aroma, fresh with a spicy hot aftertaste. Interesting.

330 ml. bottle sampled @ Vini, Birre, Ribelli 2014. Golden no head. Extremely weird. Soda, hugely mineral, thick toffee component, something rotting, light vomit, candy, sugar, yes also mineral in a salty way, citrus, ginger, bitter herbs,… I don’t get this at all. The guy who made this one appears to be into wine & maybe if you are into wine you will get this. I have to say unfortunately despite its noble ways “Vini, Birre, Ribelli” didn’t end up convincing me that the marriage of beer & wine is a good idea. Maybe Cantillon did a little bit + one small Italian producer but in general, nope, not really.

330 ml. bottle sampled @ Vini, Birre, Ribelli 2014. Golden with no head. Nose is very strange, candy, ripe fruits. Taste is very odd, lots of candy-like ripe dark fruits & something that I would describe almost as wort, lots of sugar, leaves, lots of dates,… Low carb. This appears to be one of those breweries where getting the bio-certificate etc. maters more than the taste of the actual product. This one wasn’t really for me.
