Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

The nose is as I’d expect, mild grapes, farmyard, sour. In the mouth it’s a middle, all kind of blends and fades into mediocrity

Panda 🐼 at home thanks to Wingman. A mostl clear gold peach coloured pour with a halo of tart head. Aroma i s meaty pale grains, tangy apple, sour woody bark, bark, Flavour is composed of ktart sour cucunmber lemon rind vanilla, sweet bark, musty funk. Palate is semi sweet,

On tap at Pizzeria Paradiso, Dupont Circle. Crimson with small white head. Dark fruit, cherries, moderate sourness, barrel, bit acetic on nose. Medium bodied.

Panda at home, thanks to Dave, 30/10/21. Very light haze on an orange pour with a pinkish glint topped with a thin white crown. Nose is pink berry sherbets, lemon rind, hay bale, grape skins, light funk, damp oak. Taste comprises damp oak, herb, hedgerow, grape must, grass, wine barrel notes. Medium bodied, fine carbonation, light drying close with a light acidic bimble. Decent.

(Can - “Organic Table Beer” and 2.9%) Pours slightly hazy yellow with big loose white head. Nice aroma of lemon with notes of barnyard. Light body with lovely bright carbonation. Great taste with a lovely play between a base of refreshing sourness and some interesting earthy and spicy flavours that come and go. The sourness is very lemony. There’s barnyard funky notes on top of this at the start which are joined by peppery notes that evolve into a peppery bitter finish. Some vinous notes in there too. Very enjoyable and unusual.

75cl Bottle. Blend #12. Split with the Blueberry boys, Crazy Joe Davola and SirAlex. Pours hazy deep Golden orange with a White head. Funk, brett and lemon peel. White Wine. Dry and slightly tart. Dope. Really tasty.
