Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

On tap. Amber, little hold, no carbonation. Little bit of biscuit on nose. Very crisp and sour. Nicest Kvass I've drank...

Sampled from the tap at the brewery. Pours a clear dark amber with a white head that dissipates to the edges. Aroma has earthy grains and tart red fruits with a bit of oakiness and sweetness underlying. Flavor has sweet grains and growing tart red fruits with oak and bread backing.

Sampled from the tap at the brewery. Pours a clear yellow gold with visible heavy carbonation with a thick white head that lasts throughout the beer. Aroma has bread and earthy grain with oak and tart fruits growing. Flavor has tart fruits and light bread with a bit of funk coming through

Sampled from the tap at the brewery. Pours a near clear gold with a white head that dissipates slowly to the edges. Aroma has tart citrus, bitter citrus and grass with a bit of grain underlying. Flavor has tart lemon, light tropical fruits and lemon with some oak and grains backing.

Sampled from the tap at the brewery. Pours a hazy earthy amber gold with a near white head that lasts throughout the beer and laces slightly. Aroma has a combination of bread, flora and light tart fruits with a bit of smoke underlying. Flavor has tart fruits and a bit of dark bread with some earthy oak supporting.

Sampled from the tap at the brewery. Pours a clear gold with a white head that lasts throughout the beer and laces. Aroma is quite grassy with some lemon and flora as well as oak supporting. Flavor combines citrus, sour lemon and grass well with oak underlying.

Sampled from the tap at the brewery. Pull #2. Pours a clear dull gold with a white head that dissipates slowly to the edges and laces slightly. Aroma has tart lemons with a light pepper notre, some oak and straw underlying. Flavor has tart lemon and a bit of funk with an oak bite supporting.

Blend #15 18/4/18.

Pours a hazy straw gold with a small but long lasting head of foam, excellent lacing.

Smells of tart fruit..apples and a huge Brett aroma. Kind of vinous but it's the Brett that got my attention.

Taste wise, there's the tart fruitiness that tastes apple like, some acetic sourness, grape like sourness, and very much of a Brett character that adds horseblanket and a nice dryness. All this flavour packed into a 5% abv brew!

For the abv, the mouthfeel is fine.

Another knockout beer from Wildflower!

375ml bottle, packaged 4/7/18.

Pours a hazy orange yellow with a minimal head of foam, sparse lacing.

Unmistakable aroma of those grapes, oaky, light Brett.

Delicious! The grape flavours are superb. Light funk and that barrel aged goodness shine. Pretty tart but not excessively sour.

Light side of medium bodied, carbonation is on the lower side.

Truly a joy to drink.

Blend #13, 04-04-18.

It pours a lightly hazed amber, nah quite hazy amber, small head of foam.

It smells malty, tart in a wine like acetic way, pretty massive aromas of Brett.

Malty sweetness, vinous tartness, lotsa Brett funkiness...dry overall and pretty amazing overall. I've had a few of this brewer's beers and not one would come close to being disappointing.

Mouthfeel is respectable.

I reckon that the Wildflower Brewing is currently a sleeper; bigger distribution and that will no longer be the case. Mark my words.
