Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

It pours a murky dark red with a sort of pinkish head of foam.

I smell sour cherries, wheat with a bit of a funky character.

The cherry tartness is a thing of beauty. Tart without being overly so. Notes of wheat with oak and light wood grace my palate with every sip. Some Kriek brewers could learn a thing or two from Wildflower.

Lower end of medium bodied, carbonation is fairly lively but that pleases me.

Another super delicious beer from a very impressive brewery.

375ml bottle, packaged 13/6/18, $16 and some change.

It pours a hazy amber gold with a slightly pinkish head of foam though it's mostly white. It's long lasting and there's some nice lacing.

Raspberries smell, tart indeed, light funk, quite woody aromas from the barrel. Little bit of fruity sweetness.

Wonderful burst of tart raspberries on my palate. Oaky, woody, mild funk. Very tolerable level of tartness.

Good mouthfeel for the lowish abv.

This, to me, is amazing!!

375 ml bottle, packaged 02/03/18, $16 and some change.

Pours a hazy straw gold with a finger of foam that does shrink but not quickly and not all the way. Lacing is left behind.

Apricot sourness up front, funky like a monkey, barrel gives some woody notes.

Apricot dominates, light funk in the taste. Woody, mildly acetic, I've had Lambics that would be happy with this.

Low side of medium bodied, not overly carbonated.

Some of this brewery's beers appeared today at Liquor Shed in Casper and if this is any indication of their quality, I'm stoked!

big funky brett character. Nice chalkiness and citrus notes. Light body, modestly tart. Light and simple and fun. This is a great beer and a great beer to get people into sour beers. Super well made. Excellent

Taster showing pale gold with sparse white foam. The nose shows clean light notes of brett, lemon, and light citrus. The palate is well carbonated and light bodied. Moderately tart with clean notes of lemon and light brett. Very clean and refreshing.

slightly hazy golden color. Dry brett with a ton of oak, apples in the nose. Fairly dry light palate with a fair amount of tannins. Decent stuff

medium golden color. Fairly big frothy head. Beautiful oaky nose with brett and funky yeasty character, cobwebs creep in there. Soft mouth feel, low carbonation but fairly tart, lots of oak, Lemon and brett. Citrusy notes in the background. Really really lovely. Has the excellent funkiness but doesn’t get too tart big oak though

golden color, wonderful hay, horseblanket and barnyard nose. Tart, tons of barnyard, hay and horseblanket. Great acidity, excellent mouthfeel. Nice lemony finish. Excellent. Barnyard finish. Really amazing. Definitely up there with the best gueuzes in america. Super fantastic.

mahogany color with nice red hues. Light brown head. Very dry nose with Christmas cake, black berries, stewed oranges and cola. Low carbonation, medium full body, malty, slight tartness but barrel character doesn’t show tremendously. Great depth of Christmas cake, blackberries, dry with voyager malt really shining. Alcohol very well hidden 8%.

medium dark golden color. Frothy white head. Amazing depth in the nose the grapes just shine on top of oak, citrus and funky yeasty nose. Very low carbonation, intense sav blanc character that is super well integrated with the yeast, citrus and oak playing more in the background. Off dry, Semi-tart palate leading to a very dry finish. One of the best uses of grapes I’ve ever experienced in a beer
