Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

473ml can. Pours a slightly hazy orange-gold with a medium, foamy, long lasting, off-white head that leaves curtains of lace. Sweet fruity aroma of biscuit malt, grapefruit, peach, floral and piney hops. Sweet fruity flavour of biscuit malt, tangerine, grapefruit rind, peach, pine resin and a light earthy note in a dry, bitter hoppy finish that lingers. Medium body with a slick texture and average carbonation. Pretty solid, drinks more like an IPA.

473ml can. Pours a clear brown with amber hue and a small, creamy, short lived, beige head that laces. Sweet aroma of toasted caramel malt, nuts and light chocolate. Sweet flavour of toasted caramel malt, nuts and a hint of raisin in a dry, mild bitter, hoppy finish. Medium body with a smooth, oily texture and average carbonation. Full of flavour and easy to drink.

473ml can. Pours a clear gold with a medium, frothy, long lasting, white head that leaves thick patches of lace. Mild aroma of pale malt and floral hops. Mild, sweet flavour of biscuity pale malt and grassy hops in a crisp, dry, bitter finish. Light body with a watery texture and average carbonation. Clean, refreshing and easy to drink.

473ml can. Pours a hazy gold-yellow with a small, fizzy, short lived, white head that leaves spotty lacing. Sweet aroma of bready wheat malt, lemon, vanilla and floral hops. Sweet flavour of bready wheat malt, lemon, lactose, vanilla and floral hops in a dry, tart lacto finish. Light body with a watery texture and average carbonation. Not bad, does remind me of lemon pie filling.

473ml can. Pours an opaque black with a medium, foamy, short lived, tan head that laces. Sweet aroma of roasted malt, dark chocolate, coffee and cherry. Sweet flavour of roasted malt, dark chocolate, raspberry and cherry in a dry, mild bitter, coffee finish. Light body with a watery texture and soft carbonation. A little thin for the style and not very jammy, but tasty and easy to drink.

Poured from the tap. Hazy gold with small white head. Lots of peach and apricot on the nose. Taste is similar, a bit of lacto, sweet-ish with mild tartness. Slightly subdued yogurty texture. The fruit character is decent, not much depth though.

473ml can. Pours a clear gold-amber with a medium, foamy, long lasting, off-white head that leaves curtains of lace. Aroma of biscuity malt, orange, cantaloupe, pine and weedy hops. Sweet fruity flavour of caramel malt, grapefruit rind, orange flesh, cantaloupe and pine resin in a dry, bitter grass finish. Medium body with an oily texture and average carbonation. Decent, but there are a lot better fresh hopped IPAs out there.

Draught. Dark brown. Thick head. Has some toast, nuts and chocolate. On the palate, those elements with nice complexity, moderate bitterness, and a light acidity. Not bad.
