750mL bottle pour at the Dirty Truth, 11/2/24. Clear, softer blonde-golden. Strong tannin from the Dolgos, though not too much. Brett for sure, with fleshy, pulpy softness and very mild sweetness from Mac. Clean and mineralesque. In the mouth it's got a snappiness with tight acidity and very minimal sweetness. Does make you wonder a bit about the Macs. Hard malo-lactic interludes leading to a crabapple reprise with tingly carbonation and a well-structured body. Takes patience, as many of these ciders do.

750mL bottle, undated, drunk 9/1/24. Clear, well-carbonated. Bright, brassy-russet golden. Nose is gently tart (minimal malic, no real lactic presence). No oak, and it doesn't mention barrel aging. Light, dainty apple sugars, with nutty nuances, a bit of earth and mineral. Clean. In the mouth there's a pop of acidity before apple sugars rush in and brighten the palate with balance. Light nutty sweetness, gentle, mild tartness, not malo-lactic fermented, it seems? Not oak-aged. And yet, still wonderfully clean, refreshing, authentic and crisp.
