De initiatiefnemers achter Brouwerij De Lepelaer, Sjaak van der Lee (1960) en zijn achterneef Nico Ruyter (1956), brouwen met toegevoegde grondstoffen uit de Beemster. Zo wordt er biologische tarwe uit de Beemster gebruikt en aromahop (Saaz) en bitterhop (Northern Brewer) uit de volkstuin van Sjaak. De brouwerij is genoemd naar een watervogel uit de woonomgeving van de initiatiefnemers.

Sinds 1 januari 2003 is de brouwerij officieel ingeschreven in het handelsregister van de Kamer van Koophandel. Tot 2016 werd er bij verschillende andere brouwerijen gebrouwen (o.a. De Schans, Proefbrouwerij). Sinds 2016 is er een eigen installatie in gebruik waar ongeveer 3.500 liter bier wordt gebrouwen.

33 cl. bottle @ home, bought @ Burg Bieren, Ermelo. Dutch brewery #490.
Clear dark golden with a white head. Grainy yeasty aroma. Light sweet taste with a sweet finish. Almost no taste at all, I'm sorry to say.

@home poured into a small chalice. Clear pale amber colour, good frothy white head, good retention and lacing. Aroma sweet malt, wheat, yeast, banana, coriander. Taste medium sweet and light bitter, malty, wheat, coriander (too much), yeast. Medium body, creamy texture, lively carbonation, dry sweetbitter aftertaste, cardboard, husky and spicy notes, aftertaste is a downfall, nevertheless acceptable.

330ml bottle. Minimally cloudy, chestnut colour with ruby shimmer and average to huge, frothy, moderately lasting and lacing, beige head. Cautious, caramel malty and slightly yeasty, fruity aroma, leafy hints of red and dark berries, cautious nutty overtones. Taste is dry, floral, fruity hoppy, slightly yeasty fruity and sweet-ish, caramel malty, hints of red berries, a touch of petals, some caramel, a touch of rock sugar, minimally nutty aspects. Watery texture, dry palate, medium, prickly to lively carbonation. Slightly overcarbonated, not overly bock-ish therefore - OK.

Bottle. Brown color. Caramel and chocolate in the aroma, malty sweet, caramelly, alcoholic flavor. Thin, milk chocolate and roast in the finish.

Orange color, thick frothy head. Peppery citrus aroma. Hopbitter flavor, yeasty with orange, anis, apricot and pepper. Rather alcoholic and highly carbonated. Hopbitter, fruity finish. Not perfectly brewed but still a decent and tasty tripel.

2005 version: Malt and pear in the aroma. Caramel flavor with some roast. Pear drups. Prickly mouthfeel. Just a hint of soap. Long roast bitter aftertaste. Not bad.
