(750ml 2020 bottle from William J Walter, Quebec City) Bit of a gusher. Pours nearly clear pale gold with a huge white head that fades rapidly leaving little lace. Aroma is funk forward, with earthy musky wild apples, apple skin, wet hay, some forest floor mulch, moderate acidity. Flavour is funky too, but much less so than the nose, a mix of acidic and bitter apples with a little impression of sweet apple flesh but no residual sugar really, moderate tannin, some hay and dry earth, finish is fairly crisp, lightly tannic and lightly bitter, a little wild apple acidity, somewhat short. Light bodied with very high bottle-conditioned carbonation lending a bit of a champagne feel to it. Very pleasant and nicely blended set of wild apples, a little light in flavour but enjoyed it.

Bottle: Poured hazy pale yellow color cider with light carbonation. Funky ester with some barnyard notes. Taste is lighter than expected with the nose of barnyard notes not as intensive as expected and a dry finish. Great mix of flavors without too much residual sugar notes.
