The Ale Apothecary is a very small artisanal brewery, located 10 miles west of Bend, Oregon in the middle of the Deschutes National Forest. Paul & Staci Arney built the brewery on their property in 2011 after Paul had decided that his career in industrial beer-brewing was officially over. Taking cues from historical breweries, Paul decided that he would take the very basic concepts of making beer and build a totally unique brewery out of them, relying on locally grown or foraged ingredients and using the most natural approach possible.

Before there were beer styles, there were just breweries making the best beer they could out of the raw materials nearby, the water from the ground, and the yeast in the air. Paul believes that the Process in making beer can be used as a primary ingredient, so The Ale Apothecary has its very own methodology that gives us our house character that cannot be reproduced anywhere.

We get our grain from Mecca Grade Estate Malt in Madras, Oregon. Our hops primarily come from Goschie Farms in Silverton. We naturally carbonate our beer in the bottle with Oregon wildflower honey and try to avoid any and all industrial processing aids or commodity ingredients. Instead of using exotic ingredients, we experiment with the process of making beer to find unique and inimitable flavors and experiences.

Piney, fruity nose. Sour and earthy, tart, a bit acidic. Pinewood, soil, a bit of funk, spruce needles. Not a sahti but excellent.

Bottle at share from explosivedog: pours copper with small head. Aroma is vinegar and wine, slight fruitiness. Taste is tart, winy, tangy, winy. Nice. The dry hopping on this beer did, however, confuse me.

Bottle, at share, thanks to me. Pours orange brown. Petrol, mango, pineapple, sweet tropical punch, strawberry, balsamic, herbal, guava. Medium body. Odd.

Sahati Bottle ordered from Ghost Whale, Putney. Aroma of fruit, berries, honey and spice with a vinous edge. Opaque amber. Thin creamy off-white head, retreats to the rim. Ooph. That was far tarter than I was expecting. Vinous and red berries. Real sharp edge to it. As I I acclimatise to it the honey sweetness comes through. Medium bodied. Slick. Flat carbonation. High astringent finish. Dry too. It's a sour. The Sahti inspiration seems to have been lost in translation, although with this tartness I'm using my sisu to get through it.

Bottle thanks to John. Pours a cloudy copper with small beige head that lasts. The aroma is oak, earth, funk, dark fruit, leather. Slick body, dark fruit, funk, oak, leather, nice tartness, enjoyed this.

Bottled 375ml. -from Goblet Zagreb, shared with Marko and hrabren. Unclear orange/golden coloured, small white to off-white head, fruity and mild woody nose. Sweetish fruity, yaesty, light citrusy and woody with minimal touch of honey in the finish.

9.59% version with honey. Marko is confused about this one. Shared a bottle with Ogi and him. Hazy dark golden, small off-white head. Fruity, glue, honey. Peach or apricot, carrot. Acidity. Corked wine. There's a liqouer quality. Orange. Sourness. Cardboard or wood. Light to medium body, quite sour, soft carbonation, light to moderate finish.
