Corked bottle at Phill, vintage 2015, 5+ years old
Very dark amber, almost mahogany. Aroma of wood, wine, Madeira, dark sugar. It's moderately sweet, a bit too bozy, there's some brown sugar, caramel, stewed apples; there is a respectable degree of complexity, but not the richness comparable to the best Ice Ciders.

375ml on Phill's deck. Appearance: dark copper with no head. Aroma: intense sweet apples, some booze. Taste: lots of barrel, moderately sweet, mellowed. Overall: I don't think that they should be barrel aging it.

375mL bottle, pours a deep dark mahogany with no head. Nose reveals loss of cognac barrels and candi sugar upfront, with rich caramelized apples following. Flavour is extremely rich but not actually that sweet, with lots of cognac, candi sugar/syrup, and gentle red apples. Rich and viscous, with a syrupy, cognac-heavy finish. Really great.

Clear dark maroon. Dark cola and fruity sweet apple notes. Light red bitter red fruit, rich but a bit bland and not as good as others I have had.

750ml hiding at Phill's from the rain. Appearance: purple with a rose head. Aroma: lots of apples and 🍇 notes. Taste: along the same lines, quite intense fruity character, lots of tannins; a bit dry to me, but fruitiness helps a lot. Overall: good one.

750mL bottle, pours a hazy dark amber / mahogany with a small white head. Aroma brings out lots of red grape skins, vinous notes, red apple skins, and some musty notes. Flavour is indeed like a nice red wine/cider hybrid—there's red wine tannins, musty red grape skins, gentle sweetness, and crisp apple skins. Really nice blend of grapes and apples, with a musty, gently wild character. This is excellent.

750mL bottle, pours a clear pale blonde with a small white head. Nose brings out a gentle champagne-like effervescence, crisp apple skins, alcohol, and a touch of funk. Flavour is crisp and vibrant, with potent alcohol, champagne-like effervescence, and crisp apple skins. There's a subtle depth to this that is very pleasing. The higher-than-average carbonation, combined with the slight residual sweetness and alcohol go very well together. Excellent.

Dark burgundy. Strong young wine character, lighter than just wine, but no apparent cider; moderate acidity, off-dry. Pleasant drink, nothing great.

Tasting at Ryan's, bottle
Hazy blond colour. Mild barrel, good balance of acidity and body, soft but not sweet. Very similar to Normandy ciders, apart from the price.
