Description
Big Boss has been through a lot of incarnations. In 1996 Tomcat Brewing started which became Pale Ale (it was really owned by the same people), then it became Rock Creek, and that’s when Brad Wynn became involved. Rock Creek became Chesapeake Bay for a very short time and nearly went under. We came back and started Edenton, and then, fortunately, Geoff Lamb bought it and we became Big Boss.

Can. Lightly hazy amber beer with a cream head. Tropical fruit aroma. tropical fruit and light summer fruit flavor. Medium bodied. Good bitterness. Tropical fruit and light summer fruit linger with light spice.

2 month old can A: Mostly clear dull deep yellow pour with a short thick long lasting white head. S: Light aroma of tart citrus and crackers. T: Thin grapefruit bitterness and lightly toasted bread. Citrus pith is countered by a light but unfortunate seltzer note. M: Thin, crisp, dry and well carbonated. O: I know tasty 4% hoppy ales exist so why do so many of them suck? This had potential but fell short.

Bottle sample at a tasting at Lior D's place. Thank Max. Black. Chocolate, roast, a bit of licorice, wood, a bit of wine, cherry hint, a bit sweetish, a bit sourish, a bit of oxidation, bitterish note.

Refrigerated 12 oz. aluminum can poured into a glass. Clear golden with small white head. Aroma is tart, light body, low carbonation, and little lacing. Taste is tart light lemon.

From a pint can. Pours a cloudy straw with an off white head. Aromas are grassy. Flavors are bitter dank pine and hay.

2 week old (I think) bottle A: Mostly clear pale yellow gold with a short beige head that held up well with spotty lace. S: Sour scent of orange and pine with light toast. T: Bitter and piney with a little citrus pith and pulp joining. Light melon or tropical notes and sweet bread to finish. Opens up as it warms. M: Medium body, low carbonation and a wet oily finish. O: An old school pine bomb. Jarring but it grows on you. Not bad.

The one with cherries added. Pours a reddish black, with just a bit of foam. Smells a bit roasty, some sweetness and some sourness. Mouthfeel is a bit thin, but creamy. Taste is lightly sour, mostly from the wood, some chocolate, and cherries. Great fun.

355ml bottle. Clear, copper colour with small, frothy, half-way lasting, minimally lacing, off-white head. Tangy and woody aroma, notes of blue grapes, hints of mustard seed. Taste is tart, tangy, slightly dry woody, minimally vinous, notes of blue grapes, some mustard seed, a touch of balsamico. Not overly complex.

355ml bottle. Clear, copper-ish, amber colour with small to average, frothy to creamy, half-way lasting, minimally lacing, off-white head. Spicy, pumpkin aroma, hints of clove, nutmeg, cinnamon. Taste is minimally soapy spicy, notes of pumpkin, hints of cinnamon, clove and nutmeg; creamy texture, smooth, soft, silky palate.
