Description
The origins of the brewery can be traced back to 1797, with an inn and a grocer always mentioned. It has been family-owned since 1919. Today Günter and Rainer Wagner are responsible for the cool liquid from the keg, of which especially the Ungespundete Lagerbier has a cult status in Bamberg and the region. The brewery has an annual production of 17,000 hectoliters.

Fruity yeast and slightly smoky nose, aromatic hops present. No visuals. Peachy yeast base, light yet chewy body, wonderfull hop balance. I need to get back to Merkendorf...

No you shouldnt Joris, the beer here is too good for the world :-). Clove, slightly dusty nose. Cloudy orange, lowish head. Mainly clove in flavor as well, marzipan, perfumed notes - the difference between the franconian and southern bavarian weissbiers is striking. Dry medium body. Very nice.

Ah but Joris, it is a very nice Marzen :-) It starts with the looks: Hazy amber with moderate carbonation, big foamy tanned lacing head. Bready, some dried tropical fruit aroma, herbal and aromatic hops. Fruity and honeyish malts, some perfumed notes and a elegant dry herbal finish. Solid chewy mouthfeel, bready and herbal aftertaste.

Bottled (BB 12/2005)
Clear copper brown, not much head. Lemony hoppy nose. Flowery hoppy, sweetish malty. Very English-bitter like, maybe Kentish hops are used here? Interesting German lager.

Für ein Pils ist das Bier ungewöhnlich malzig, ab der Mitte bis zum geschmacklichen Abschluss kommt auch noch eine pilsige Herbe dazu, wohl dosiert, allerdings irgendwie doch ein wenig unstimmig. Das Aroma könnt ein wenig vielseitiger sein. Test vom 25.10.2005, Gebinde: Glasflasche Noten: 7,9,9,9,12,9 - 8,95

Der Geruch ist widerlich und es kostet überwindung, dieses Bier zu kosten. Der Geschmack jedoch lässt einen aufatmen, fruchtig und leicht bitter. Der Geruch und das Etikett lassen nicht erahnen, was für ein Bier in der Flasche schlummert! Test vom 2.10.2005, Gebinde: Glasflasche Noten: 12,9,12,12,7,10 - 10,50

Draught Green-orange beer, cloudy; small head, leaving lace and a small ring. Clovey and smokey nose, cigarett smoke even, and a faraway fruity sweetness, bit of speculoos . Cloves again in force, wheat obvious, there is some sweet flavour, but all in all, it’s a very dry Weizen. Medium bodied, quite dry. Another remarkable Weizen. I should not add these ratings to the site, M-dorf ought to remain our dirty little secret. Joss?

Draught Orange, pale-amber beer, good white head, not stable. Fresh, flowery nose, touch of apricot-like fruitiness, sweet but not offputting. Quite sweet, bready, sweetbread, nearly honey-ish, and a touch of hops in the finish. Medium body, velvety MF. Nice, sweet, but lovely. Probably very nourishing too. Joss got lyric over this, had to drag him out of the pub.

Draught Served in Stein ; head fast gone. Flowery, "lunaria" nose, yeasty touches but not green. Very flowery taste, English bitter-like, very hopped with fresh noble hops; it’s the best apéritif one could imagine. In the end, a smokiness is obvious. Light but nowhere watery. Good (natural) carbonation is giving it a truly lively aspect. WOW. This M-dorf is a beer Mecca.

Draught Golden, clear colour; good whipped-creamy head. Dry, herbal, malty with a touch of hops, and sesame-like finish for nose. Dry-herb pilsner, quite some hops, and in the taste, the malt surfaces after some time. Faraway, not-sour lactic touch. Good body for a Pilsner, hop in the aftertaste again. Now this is southern German Pilsner!
