Description
A brewery that brews while carefully interacting with koji mold and yeast using brewing equipment developed in-house. Today, only a few sake breweries remain and the atmosphere of the past has faded, but the sake "Oyama" was named after the region as it represents the region.

Drank cold. The appearance of the liquid is clear. The color is a hint of yellow. The olfactory intensity is normal, and the olfactory persistence is sufficient. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas traces impressions of yogurt. The first impression of intensity in the mouth is of medium strength’s sake. The aroma on the tongue is medium dry. The body is full. The taste intensity is normal, and the taste persistence is sufficient. The taste is pleasant. The final mouth sensations are ready to drink. The palate brings hints of vanilla and fruit.

Very interesting appearance; it’s not all that cloudy and dosent show a thick, white, milky sediment, but rather a very finely ground up residue, leading to a more diaphanous robe of opal. Still some clarity on the edges, actually. Very light film of bubbles on the surface and excellent legs left behind.
Semi-sweet nose is more spicy and citric than I have ever seen from a nigori. Not all the rich, chewy coconut/pina-colada notes (though inevitably, there is still some of it). Perfume and passion fruit, with a dry, almost tangerine-like fruitiness and lemon seed acidity. Soft vanilla blossom and very minimal honey notes arrive on the finish, which is dotted with white pepper and carries a good strength to it. Alcohol very well masked for its strength (listed between 14 and 14.9%). Very refined and has completely redefined the style for me. It seems a nigori dosent have to be blatant or forceful in its display of unfiltered qualities and this one is very close to any other high quality, filtered sake.
The flavor follows suit, with a soft mouthfeel, that, importantly, isnt thick and chewy, but rather more fluid and full. Pineapple, tangerine, passion fruit and light melon sit on the palate, with some light vanilla and moderate acidity for a finish. Surprisingly floral and delicate for its unfiltered nature. Very well concealed alcohol. Delicious stuff.
