Description
We offer delicious aged sake that is produced in small quantities by hand using traditional methods , and is aged and bottled under strict control. We continue to focus on making sake that has a rich flavor, which means bringing out the full flavor of the rice. In the 1970s, we completely eliminated the use of sugars, seasonings, and barrel sales (subcontracted to major companies). Since then, we have focused on creating rich-bodied sake and
specializing in aged sake aged for several years. We are the only privately owned brewery in Hida.
Our sake brewing method is primarily traditional, hand-made . All sake, except for our ori-zake, is aged and aged in our brewery for several years .

Drank at room temperature. The liquid’s appearance is straw yellow. The olfactory intensity is high, and the duration is appreciable. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas are of vanilla, almond, apricot, smoked, oak, soy, cognac, honey and dried fruit for a fruity aroma and a strong taste. The first impression of intensity in the mouth is of robust and solid sake. The body is structured not heavy. The taste intensity is high, and the taste persistence is good. On the palate the aftertaste is intense. The taste is very pleasant. The final mouth sensations are of drinkable sake. The finish is long, clean and complex. On the palate there are hints of white peach, fruit, coconut, smoked, licorice, anise, pear, green apple and white mushrooms.
