18/7/2020. Sample courtesy of danlo, cheers Ed! Pours clear almost colourless with a small bubbly white head. Aroma is sweet, fragrant rice, touch of aniseed, flowers. Medium sweetness with a tangy bitter/tart side. Moderate body, slight creamy texture soft carbonation. Very fragrant and tasty, liked this more than most sake’s I’ve had.

300ml bottle from Market Hall Wines at Durham Market. Clear slightly yellowy colour, no head and aroma of rice, aniseed, liquorice. Taste is rice, melon, fruity with aniseed notes, and grassy, boozy. Oily mouthfeel, medium bodied, low carbonation, dry spicy warming boozy finish. Quite drinkable.

Drank cold. The consistency of the liquid is clear, colorless and transparent. The olfactory intensity is high, and the duration is appreciable. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas finds impressions of vanilla, peach. The first impression of intensity in the mouth is of robust and vigorous sake. The aroma on the tongue is rather dry. The body is full. The taste intensity is high, and the taste persistence is good. The taste is very pleasant. The final mouth sensations are ready to drink. On the palate there are notes of pear, apricot, banana, resin, pine, pineapple and licorice.
