22/10/2024. Bottle pour at JSS Japanese Sake & Shochu Tasting-room, Tokyo. Region #473. Japanese Prefecture 44/47. 15.0%. Pours cloudy ivory white with no head. Aroma is milky, banana, bready, rice water, gummy sweet, yeast. Light sweetness, medium bitterness and body. Quite a boozy lip tingle to finish. Liked it.

720 ml bottle from Furusato Nozei. Ice, clear, pretty. Nose is rice, citrus, stone fruits, light melon. Flavor is sweet rice, light vanilla, peach, melon. Tasty but not so unique.

720 ml bottle from Furusato Nozei. Nose is rich rice, light vanilla, light, spicy ginjo-ka, apples and pears. Clear, icy. Rice, alcohol heat, apple, grain. Flavor is subdued and dry. Crisp and light with a bit of alcohol heat.

720 ml bottle from Furusato Nozei. Fruity nose, grapes, apple. Crisp and clean. Clear, icy. Dry, clean, fruity, nice citrus and apple, grape. Interesting and unique flavors. Very clean, quite dry in the finish.

Little bottle grabbed from Whole Foods. Cloudy alka seltzer pour but not bad looking. Nose is coconut light melon. Tastes of thick rice water, coconut, fruity. Chewy mouthfeel. Little alcohol some sugary residue on tongue. Glad to see some recent rates rate on sake raters

Smaller bottle at home bought from wine shop I discovere near my work. Probably over priced. Yellowish pour. Nose is almond skin, simple syrup, nori. Tastes of white stems of an orange, nutty, again the dried seaweed, hint of booze and faint residual sugar. Creamy palate thicker mouthfeel.

Had some of this at Afuri. Pours a somewhat cloudy white color with light tan elements. Soft floral nose. Pears, light heat, sweet woody base. Very good. Quite nice Sake.

Bottle from Takimoto, 720 ml. Yeasty, fruity nose, citrus, koji, light vanilla, rice, pepper. Cloudy but not thick, off-white withbyellow tints. Tangy, fruity flavor, milky yeastiness, bit of alcohol and a peppery burn. Quite nice. A thin, light nigori, as I prefer. Good.

Fairly fresh bottle, probably early-mid 2006, 300mL, purchased from Belfast, ME co-op and consumed on 9/3/06.
This one didn’t have nearly as much sediment as most nigoris I’ve seen, which created a less milky, more glossy pearl-like appearance. Light enamel and light-cream tones. Still in the glass, and creating some moderate legs.
Very nutty smell, much moreso than I’ve seen in a nigori, without the extreme tropical-fruitiness. Coconut-pineapple is still apparent, inevitably, but it’s matched in stride by a sticky rice-sugar and light, dry, rice sharpness. Alcohol is well-concealed in the aroma. Aroma strength is high, but I must say I had to really stretch to pull many complexities out of it.
Soft and comforting is the palate, with a growing rice dryness that seems to climax on the finish. I expect harsh alcohol or a heavy sharp-graininess, but it never comes. Rather a light milky-pineapple flavor up front, with warm honey-walnut paste sitting bluntly on the end. Very neutral, fruit-skin-like notes, like extremely unripened pear/nectarine perhaps. Strong nuttiness, rather chewy at times, but also, with the lower amount of sediment, it does seem a touch watery in places. A light dose of white and black pepper further dries the finish.
