300 ml bottle. Huge ginjoka nose, dusty, peppery, spicy, lemon. Oily and viscous. Sweet, then dries out nicely. Very spicy and peppery, airy, light palate. Great, highly refined daigin. What I have come to expect from Born. This is great value as well, at least in Japan!

bottle at home thanks to 3.8 KyotoLefty... light almost clear ... soft sweet fruitr .. big ssoft mineral fruit nose ... dry front ... soft fruit ... light floral rice ... very soft veyr mellow thins not trhe right word .. just very subdued ... with a ligth alcohol finish.. light peppery bite

Bottle from Takemoto. My first sake in almost a month. Make it a Born! Big, juicy nose, very fruity and spicy, melon and peach, peppery, light cedar. Shiny, oily, just the lightest golden tint. Rather sweet and fruity, full flavor, rice, creamy, a touch lactic. Nice acidic balance. Full, silky, smooth body. Another winner from Bon. Or Born...

Taster at Jam. Cloudy white color, nose of alka seltzer, minerally, milk, peaches. Spritzy, flavor of milk and vanilla, very dry fruitiness. A bit strange but interesting and good.

300 ml Bottle from Isetan. First time to see a little bottle from them. Dusty nose, rice and koji, pepper and spice. Citrus. Smooth, estery flavor, medium sweetness, stewed peaches, light caramel and vanilla, pepper, rice, cream. Round and fruity with a prickly, alcohol finish. Very mellow as a result of aging, but maybe that makes it lack the spunk their sakes usually have. Very good, not quite great.

Glass at Jam. Yellowish color, oily looking. big, rounded, fruity nose. Mellow, fruity flavor, rich esters. Lovely. Very smooth and integrated. You definitely get a great mellow and refined character from the 2 years aging at 0C. Great.

720 ml Bottle from Isetan in Kyoto. Served chilled. Big tropical fruit nose, jungle flowers, huge nose. Pear, papaya, wow. Clear, oily, a bit thick. Very sweet and fruity, tropical for sure, spicy and flowery, vanilla. Crazy fruitiness. Extremely delicious and luxurious, though a bit too sweet, like candy. The spicy fruit flavor is like no sake I have ever tried. Really over the top. The prickly peppery finish tried to balance but can’t. Still, great stuff. Doesn’t seem to fit the SMV and Acidity ratings, though. Very sweet, and little acidity felt.

Bottled@SBWF2012. See through colour, no head. Aroma is sweetish rice, mild glueish notes with some slight fruity and resiny notes. Flavour is rather much similar with some mild alcoholic sweetness as well. As is not too good, but could probably be nice with some food.

Glass at +Sake bar. Aroma of citrus, funk, peach, and nice koji. Cloudy but not thick, lightly fizzy too. Great flavor of citrus, koji peach, pepper. Absolutely lovely stuff. Light and refreshing, but huge flavor.
