28/7/2022. Bottle shared by danlo, cheers Ed. Region #402, Japanese region 22/47. Pours clear almost colourless with no head. Aroma is sweet, fragrant rice, light fruits, hints of jelly spogs. Medium sweetness, with some gentle alcohol bitters. Medium body, oily, minimal carbonation. Sweet, warming, slightly drying finish. Quite refined. Liked this.

300ml bottle from Japan Centre. Clear very pale yellow colour, no head and aroma of rice, fruity, melon. Taste is rice, fruity, mellow, citrus & caramel notes, with some alcohol. Medium bodied, low carbonation, drying boozy finish. Nicely drinkable.

Bottle from Furusato Nozei. Rich rice, light lemon and stone fruit. Clear, icy. Strong rice flavor, some milky vanilla and a touch of toffee. Creamy and mellow, not a ginjo, but a very big, elegant junmai. Light stone fruit in the background, with a peppery, spicy finish. “Born does Junmai” is the feeling. Quite different to their more refined sakes, but shares a family resemblance.

720 ml bottle from Takimoto. Very big fruity nose, with minerals and cream, apples, lemon, a touch of cheese, some licorice. Medium cloudy whitish. Quite interesting. More mineral and spicy than usual for them, a bit more challenging too, with a rather strong medicinal aspect as well. Pretty strong yeast character. Interesting and very good. This is shiboritate, freshly made, and thus lacks the smooth, rounded character of their usual stuff.

300 ml bottle. Thick and oily looking, shiny. Big, fruity daigin nose, spicy, flowery, ricy. Sweet and full, peaches, apples, melon, peppery spice. Honey too. Delicious. Full, oily body. A bit too sweet to drink a lot, but great in small quantities. Floral and lovely.

300 ml bottle. Huge ginjoka nose, dusty, peppery, spicy, lemon. Oily and viscous. Sweet, then dries out nicely. Very spicy and peppery, airy, light palate. Great, highly refined daigin. What I have come to expect from Born. This is great value as well, at least in Japan!

bottle at home thanks to 3.8 KyotoLefty... light almost clear ... soft sweet fruitr .. big ssoft mineral fruit nose ... dry front ... soft fruit ... light floral rice ... very soft veyr mellow thins not trhe right word .. just very subdued ... with a ligth alcohol finish.. light peppery bite
