Bottle pour @Keeper's Cut. Clear, bright, faint amber gold. Smokey, charred pineapple & cooked, infused peppers, very mellow & a little green. Taste is veggy, cooked down pineapple, bit of lemon, sweet tea, very faint pepper heat with some super faint itchiness, green finish. Lovely.

Bottle pour @Keeper's Cut; stemware. Clear, dark, reddish amber; purty. Smell is big & bold vinous raspberry, faint medicinal, warm honey. Taste is sharp, hearty, deep flavored raspberries, bitter-tart & lingering. Prickly, slightly green flavor works lovely with the semi-sweet honey to give me something drier & much more floral. Lovely.

Clear, bright maple, still pour at the source. Dark, sharp, rich honey nose with a weak layer of unidentified cooked berry, nice perceived acid. Sweet, juicy, grape-y, light lemon, clover, creme, complex, lingering acid, sugary feel on the finish. Good.

Bottle at the source; stemware. Clear, medium gold, still bottle pour. Cooked down peaches, syrupy honey, sharp nose. Soft, peach pie, crusty flavor, decent acid, apple husk, touch of veg, cooked down, maple-y peach. Decent.

Bottle pour @Keeper's Cut, 40 minutes or so out of Asheville. Pale gold, clear, bit expected. Sharp, cooked apple & whiskey nose. Back-sweetened(confirmed with the bartender), Macintosh, raw honey, rich, still not too sweet. Big acid. Simple. Great.

Bottle pour @Keeper's, with my Bronx-born barkeep. Darker body, clear varnish. Sweet bourbon nose, melty butter & honey. Taste is rich honey & softly sweet bourbon, twang, more pronounced acid, very thin, hot, tasty. Never got what barrel it was. Maybe I just never wrote it down. Borderline great.

Bottle pour @Keepers, July '23. Stemware. Clear, vibrant pale gold. Less floral, more apple acid, leafy nose. Bittersweet, flatter/leaner taste, more pronounced wax & earth, bigger perceived acid than the dry version. Possibly switched up the seasonal honey between batches says the man behind the bar.

At the source. Stand up bar, slow, drizzly day in July. Clear, maple-y, still bottle pour. Green, bittersweet, husky berry, apple, sharp, touch of plastic nose. Earthy sweet, touch of cherry fruit skin, light tartness, faintly sweet, good pith, dry finish. Great.

On tap @Keeper's, in the cute town of Marion. Clear, dark cola with a cranberry hue. Unusually frothy is a running theme here. Very waxy & medicinal berry nose. Waxy, semi-sweet blackberry, faintly waxy, solid acid. Lightly vinous, grassy, hinting medicinal. Not my favorite.

On tap @Keeper's Cut. Sort of hazy, bloody, deep cranberry color. Orange, apple cran mixed nose. Sharp & deep cranberry, a little vinous & herbal, bit better than Ocean Spray. Beautiful acid cuts how sweet it probably is. Lingering round cranberry. Pretty good.
