Ethereal Brewing - a new Craft Brewery and Tap Room in the Historic Distillery District of Lexington Kentucky. This brewery is a culmination of our long time dream to brew great beer beyond what we have made over the years for our friends and family.

375mL bottle, 2023, from DrFabulous, drunk 1/20/24. Dark, viscous, no head. Lovely, lovely vanilla, fudge, hints of easygoing bourbon. Some banana amyl coming on strong. Must be the heavy vanilla acidity. Super intense, sharp, bitter vanilla. A bit thin, though not boozey or over-barreled. I like the vanilla, it's just too acidic. Savory, fudgey notes are excellent but can't get past the sharpness and relative thinness.

Thanks Clark. Aroma is vanilla, bourbon. Taste is sweet, vanilla bourbon and a bitterness in the finish. Meh.

Coconut, almonds, chocolate malt, and hay aroma. Black with moderate brown head. Very sweet coconut, nutty chocolate malt, and moderately bitter hay flavor. Nice body and balance. Very nice.

Keg at the Public House, 4/23/23. Hazy orange, thin white head, average retention. Aroma of bready malt, stone fruit. Taste is stone fruit, strawberry, bready malt. Slick, well balanced.

Keg at the public house, 4/23/23. Hazy orange, large beige head, average retention. Aroma of earth, dank, lime, melon. Taste is melon, lemon (hey, anagrams!), dank. Mild bitterness. Solid.

Keg at the Public House, 4/23/23. Near black, medium tan head, good retention. Aroma of roast, oats, chocolate. Taste is chocolate, roast, oats, cherry, mild smoke. Slick, well balanced. Very nice. New brewery! Brewery #2141, USA #1736, Kentucky #21. Nice first impression for these guys.

Bottle, courtesy of drfabulous, pours with a deep dark void of a body that supported a short lived dark tan head of foam. The aroma offers up smooth bourbon and invited chocolate and vanilla. Nice. The taste delivers a rich rewarding blend of smooth booze boosted bourbon sweetness rolling around in a pool of soft vanilla goodness and a bit of chocolate. To midway the big ABV starts to warm this experience up as well as cutting into the richness with a modest boozy sting creating a nice balance across the palate. Solid sipper. I love this.

0.375L bottle, courtesy of drfabulous, pours with a dark mahogany colored body that supports a thin ring of light tan foam. The modest aroma offers up a blend of oak and bourbon followed by oak nuanced dates and plums. The taste delivers a punishing beat down of rich and boozy goodness. I get the same boozy bourbon softened spicy oak, bourbon and more booze as noted in the nose. The boozy barrel character is forward but there's a nice smooth supple undercurrent of sweet rich dark fruity esters creating just the right sipping balance. The fruity esters are date and plums swimming in a thin pool of molasses. This is a bracing yet rewarding sipper.

12oz can, courtesy of drfabulous, pours with a clear mahogany colored body that supports a nice light tan head of foam. The aroma offers up plum and fig like fruity esters as well as faint roasted malts and winter spices. The taste follows suit as I'm getting a smooth slick sweet load of dark fruity esters as well as thin murmurs of roasted, crystal and caramel like maltiness. This also delivers a modest degree of winter spices to help create more depth and balance. Really nice offering.
