Established in 2025
It started with a nickname, then grew. A nickname of a close, life-long friend. A friend that has a strong passion for craft beer and the friend that helped lead me from mass market light beer to my own strong passion for craft beer. There would be no Skinny Flowers Brewing Company without him and his friendship. We have shared many beers together over the last 35 years.
Our name is also a tribute to the hops that are such an important ingredient in the beers we passionately craft. Yes indeed, hops are skinny flowers - often growing to heights up to 20 feet.
Our Vision
Skinny Flowers Brewing Company was founded by Jim and Liz King. Jim grew up in Ocean County NJ and Liz grew up in Westchester County NY. They met while each were working as executives in NY for large multinational corporations.
We share a passion for high quality craft beer - Liz enjoys IPAs while Jim grew his affinity for German Lagers during his 18 years working for a Munich based bank. We started Skinny Flowers Brewing Company to not just share this passion with our community, but more importantly to connect with and serve our community - both inside our taproom and beyond its walls.
Finding a Management Team that shares this vision and passion was critically important to us. Our Head Brewer, Isaac Boucher, relocated from New England and brings with him ten years of professional brewing experience. Our Head of Sales, Hospitality and Customer Relations, Alex Silberstein, is an Oceanport resident and brings twelve years of craft beer-focused hospitality experience.
You have many choices on where you spend your time and what you choose to drink - it's your party. Our goal is to connect with our community, crafting high quality beers that bring people together, creating a high quality taproom space where everyone feels welcome and at home.
Our Brewhouse
Built by Premiere Stainless in Escondidio, CA our 15bbl brewhouse was constructed to our specifications and allows us to perform decoction mashing as desired. We have four 7bbl & four 15bbl fermentation tanks, along with two horizontal 15bbl lagering tanks.
Our Home
We chose Fort Monmouth for a reason - this place is rich with history and right now, it’s buzzing with new energy.
Established in 1917, this U.S. Army installation was a key in developing military communications and radar technology throughout the 20th century. The base was officially closed in 2011 as part of the Base Realignment and Closure (BRAC) process. Today, the fort is the midst of a significant revitalization aimed at transforming the 1,126-acre site into a vibrant hub for technology, entertainment, and community living. With Netflix slated to open a state-of-the-art production complex in the next few years, we could not be more proud to be a part of Fort Monmouth's new chapter.

Can shared by CLW--thanks Chris! Cloudy, bright yellow, thin cap of head, light viscosity, light, spotty lacing. Aroma is citrus, Pilsner malt, lemon, mild herb. Taste is strong lemon citrus, pale malts. Smooth texture, soft carbonation and finish as taste. Solid.

Can at the brewery, 8/16/25. Unclear orange, off white head, drippy / streaky lace. Grains, spice, earth. Dough. Fairly lively feel. Decent overall.

Draft at the brewery, 8/16/25. Fully hazy yellowish pour, white head, strong lace. Candied citrus, stone fruit, and some papaya and mango as well. The aroma is rather sweet. Taste is a little more balanced, and also thinner. Kind of a muted hazy flavor profile overall. Not bad, just a little dull. Mouthfeel is similar, fine but just a little thin / dull. Overall, it's a dull hazy for me.

Draft at the brewery, 8/16/25. Unclear yellowish-orange, white head, fairly strong lace. Herbal, grainy, bread, grass. Lively feel. Solid overall, but unexciting. 6.9, nice.

Draft at the brewery, 8/16/25. Fully have yellowish color, white head, drippy lacework. Bright peach, papaya, mango, and melon. Juicy. Moderate carbonation. Good mouthfeel. Really solid hazy.

Draft at the brewery, 8/16/25. Pots a fully have yellowish color with a white head and moderate-plus lacework. Pineapple, mango, melon, and apricot come through. Smooth, maybe a touch thin, but tasty overall.

Draft, small pour, at the brewery, 8/16/25. Pours a dark brown color with a thin light brown head. Roasty, molasses, coffee, chocolate, and caramel. Fairly sweet. Well hidden ABV. Slightly thin for the style. Pretty good overall.
