Description
Since its founding, Shirataka has been offering only authentic, 100% home-brewed "genuine Nada sake" that they are truly proud of. The best brewing water for sake, "miyamizu," and "Yamada-Nishiki" from Yoshikawa-cho, Hyogo Prefecture, a special A district, are used to brew Nada's traditional "sake yeast" method. It is also selected as the official sake of Ise Jingu Shrine and offered to the deities of the shrine. Hakutaka is the only ise jingu shrine sake brewery in Japan.

Drank cold (recommended temperature). The color is a hint of yellow. The olfactory intensity is normal, and the olfactory persistence is sufficient. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas: vanilla, melon, coconut, apricot, anise, flowers, banana, pear, kiwi and mimosa. The first impression of intensity in the mouth is of robust sake. The aroma on the tongue is rather dry. The body is full. The gustatory intensity is high, and the gustatory persistence is sufficient. The taste is pleasant. The final mouth sensations are ready to drink. The taste is given tones of vanilla, peach, strawberry, pine, soy sauce, white flowers and umami. VARIATIONS Plus, drunk at room temperature (My vote 6.8/10). The consistency of the liquid is clear, colorless and transparent. The olfactory intensity is high and lasts appreciably. The taste on the nose - dominant aroma is of malted rice Koji. 720 ml bottle. Sold as the only sake offered to the gods at Ise Shrine. Yellowish coloring is strong. Aroma of rice, peach, pepper and spice. Rather restrained. Spicy, fruity flavor; woody (cedar), with ripe pears. Light but full body. Quite sweet. A very nice drinking sake, though maybe not very memorable. Went well all by itself, as well as alongside dried squid.
