Grabbed a bottle because while no good place to beer to go getting quality sake isn’t a problem. Pours light clear yellow. Nice semi sweet floral nose. Tastes of flowers, peach, vanilla, and alcohol. Warming finish. Very nice and I didn’t know Americans even made sake.

375 mL bottle. Pours a clouded white like coconut milk. Sweet sugary banana frosting aroma. Palate is ever so slightly grainy. Flavor is sweet, sugary vanilla frosting, fruity banana elements, almond, cotton candy, brown sugar, and more sugary descriptors. A little alcohol creeps into the finish. This is easy to drink and quite flavorful with no harsh edges. I really like it.

Bottle from the Coop in Davis. Clear orange/pink color with a few small bubbles. Nice plum aroma. Love plum. Medium body with no carbonation. Nice plumy/oily impact in the mouth. It’s a bit sweet, but it is so refined. I’d happily drown in a cask of this. It is so not beer. On the other hand I’d happily drown in a cask of Speedway Stout. Or Fullers Vintage Ale. Or Westy 12. But when it’s not beer, this is fun.

Bottle from Total Wine. Chilled; shaken. Milky white pour. Aromas of fruit and alcohol. Seems to be coconut and melon. Very smooth mouthfeel. There’s heat. It’s creamy. Very mild fruits and arguably floral esters. Suggests tropical fruit juices. Finish is smooth and warm. One of the more palatable sakes I’ve had. Perhaps this one is for beginners.

Bottle purchased at Whole Foods, Charlottesville, VA. Pours cloudy, chunky white. Alcohol in the nose, with coconut and some tartness. Fruit, alcohol, and coconut in the mouth. Tasty.

Pours, cloudy white, almost looks like real lemonade. Aroma of rice, alcohol and some fruitiness. Taste burns a bit on initial taste, then mellows. Milky body and the fruit is mostly banana coconut. I could detect yeast in there as well. Overall, a decent sake.

Strong soy sauce and rice aroma - only slight hint of raspberry. Very light yellow color. Light smooth tasting and long lasting raspberry and rice flavor with moderate alcohol and soy sauce finish. Not at all what I expected - infusion only imparts a very light fruit flavor not unlike a traditional fruit lambic the way the fruit come out in drinking.

2004 bottle. Served chilled but I let it warm as I tried it too. I was shocked, it poured a pearl-cream colored tapioca consistency white. Pearl seems to be a fitting name for this. Aroma is hardly reminiscent of other sakes I’ve tried, but that’s ok, this one was much fuller and more varied. Not just sharp rice alcohol. It’s got pineapple, coconut milk, mangoes, rich, vanilla, tapioca and a hint of alcohol. Flavor is much like coconut, light cedar and rice pudding. Very sweet, as has been said, but for some reason, that didnt seem to bother me. It wasnt syrupy and with this much alcohol, I had to drink it slowly, so it didnt get cloying.
The mouthfeel, being an unfiltered sake, was delightful. Smooth, creamy and lightly chewy/grainy. Finishes on a rice note, with some alcohol perceivable. I absolutely LOVE highly Unfiltered beers, and this is no exception, being a sake.

2003 bottle @ California Rollin in Rochester NY. Tried this a while ago (before sake was listed on the database). Chilled. Pours a glassy, lightly hazy pinkish-violet. Aroma of light alcohol, lots of fresh black raspberries, and some sharper rice notes. Flavor is surprisingly sweet, lightly syrupy and quite warming on the finish. Though this uses fresh Oregon raspberries, it still tastes a bit artificial, or maybe just more one-sided, not sure, but it was a bit too much for me. Would have liked to see more sake characteristics and less (more subtle) raspberry notes. Mouthfeel is lightly grainy, but thick right away when it is very chilled.
