Bottle at Ante, Newtown. 2023 Vintage. Golden colour, no head and aroma of rice, caramel, honey. Taste is sweet, rich, rice, caramel, honey, with some tangy and acidic notes. Medium bodied, low carbonation, sweet honey-like finish. Quite drinkable.

22/10/2024. Bottle pour at JSS Japanese Sake & Shochu Tasting-room, Tokyo. Pours clear almost colourless, just a slight gold tint and no head. Aroma is citrusy, lemon, melon, caramel, rice water. Moderate sweetness and bitterness with light tartness. Moderate body, smooth, no carbonation. Light acidic finish. Would be good with seafood.

22/10/2024. Bottle pour at JSS Japanese Sake & Shochu Tasting-room, Tokyo. Pours beautifully clear pure gold with no head. Complex aged aroma, nutty, honey, caramel, walnut, dried fruits, milk chocolate biscuit, twig, butterscotch , hint of fungi. Medium sweetness and bitterness with a light sour alcohol edge. Medium body, smooth, no carbonation. Very nice.

Is this PX?! So rich and raisiny with earth, mineral, moss, and tons of acidity that separates it from your average sherry or sake. Salinity is high. Soft, rich, good acidity and and attenuated. Olive brine, more sherry and just unreal stuff.

Bottle at home ... see also http://search.japantimes.co.jp/cgi-bin/fg20080530d2.html for sakery (sp?) reference ... clear with the barest yellow tinge ... soft mellow floral rice ... rich ... deep wonderfully complex nose ... soft sweet ... little alcohol in the linger ... almost an alcohol burn ... but a nice back bone to again a rich complex is mellow flavour ... this is almost the quintessential sake for some reason in my mind...
