Bottle at Kanpai, Bermondsey. Aroma had fruit and nuts. Boozy edge.Clear fold. No head. Warming nutty booze. Underlying veg. Light. Thin. Flat carbonation. Long astringent finish. Boozy but uninteresting.

720 ml bottle. Nose is rice biscuits, toasted rice, lemon, lactic acid. Sweet and sour with nice citrus and creamy lactic funkiness to go with the rich rice. Lovely.

--Bottled at Koie Ramen Munch, Oslo. -- Clear pale yellow. Aroma of burnt rice. Mid sweet with medium body and rounded mouthfeel. Toasted rice, mild salmiak and earthyness. Warming finish.

720 ml bottle. Can't believe I am just not trying this. Pours with the slightest yellow tint. Funky nose, lactic acid, pears, apples, rice, vanilla, mandarin orange. Does not say so but almost certainly a yamahai. Slightly sweet, also quite sour and a bit funky flavor. Super complex. Green apple, lemon, orange, melon, pear, vanilla. Really great stuff.

Thought I was getting a koshu but still and interesting historical recreation. Copper yellow pour. Nose is rich umami and maple syrup. Tastes of maple syrup, burnt grass, mushrooms, lemon, honey. Rich creamy mouthfeel. Funky finish.

Clear, colorless. Icy. Dusty, slightly barnyard nose of rice, light stone fruits and citrus, apple. Flavor is mild, dusty, dry, old school. Light sweetness. I get a sense of the house yeast working. Not exciting or huge, but very tasty and earthy, makes me think a lot of sake was like this in the old days. Good, but more importantly, interesting and unique.

Bottle from Isetan. Milky, hazy greyish-white. Milky aroma, rice, vanilla, lactic acid, pears, apples. Sweet rice flavor, pudding, cream, vanilla, Asian pear, coconut, light cinnamon and nutmeg. Full but not heavy. Decent stuff, not too thick and heavy, but not as good as the yamahai version.

Oh yeah. 720 ml bottle from the brewery. Brewed in 2017 by. First time with Yamadanishiki. Acidic, lactic, fruity rice nose. Grains, lemon, yogurt, apple, light chocolate. Very tart flavor. Green apple, grainy rice, vanilla, yogurt. Also berries, light chocolate, booze for sure. Wild. Very unique. Super intense and maybe loses some drinkability from that. Love though, if challenging. Soft, silky body.

720 ml bottle from the brewery. Viscous, clear pour. Nose is rich rice, kimono style funky acid, a touch of caramel, apple. Flavor starts with bright, acidic citrus and green apple, then rice, vanilla, light caramel, finish with a bit of Sprite. Fun stuff. Huge, full body.

500 ml bottle from the brewery. Huge, spicy ginjo-ka nose, kloji, cedar, pepper, orange, apple. Clear, icy. Crisp, fruity, spicy and dry. Light and delicate, with apricot, citrus, apple. Lovely.
