22/10/2024. Bottle pour at JSS Japanese Sake & Shochu Tasting-room, Tokyo. Pours clear almost colourless, just a slight gold tint and no head. Aroma is fragrant rice, floral, melon, vanilla, caramel, light alcohol notes. Medium plus sweetness, light to moderate bitterness. Medium body, smooth, no carbonation. Subtle and very good.

Drank at room temperature. The consistency of the liquid is clear and transparent. The olfactory intensity is high and lasts appreciably. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas recognizes hints of resin, Port wine, cognac, dried fruit and umami. The first impression of intensity in the mouth is of powerful and robust sake. The aroma on the tongue is medium dry. The body is structured. The taste intensity is very high, and the taste persistence is good. The taste is pleasant. The final mouth sensations are of drinkable sake. Notes of vanilla, dried apricot, mushroom, spring water, gin, honey, wood, oak, soy sauce, mimosa and white mushrooms settle on the roof of the mouth.

Drank at room temperature (recommended temperature). The consistency of the liquid is clear. The color is slightly yellowish. The olfactory intensity is high and lasts appreciably. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas finds hints of apricot, strawberry, coconut, mushroom, almond, oak, white flowers and white mushrooms. The first impression of intensity in the mouth is of strong sake. The aroma on the tongue is rather dry. The body is structured. The taste intensity is high, and the taste persistence is good. The taste is pleasant. The final mouth sensations are of drinkable sake. The palate ends with hints of cognac, dried fruit, umami, soy sauce, caramel, dried apricot, green apple, mushroom, spring water, honey, resin, pine and anise.

The aroma in the mouth bears signs of cooked rice, milk, vanilla, melon, dried apricot, almond, pepper, oak, umami and white mushrooms for a strong taste.

The taste is pleasant. The final mouth sensations are ready to drink. The palate brings hints of rice, vanilla, white peach, melon, strawberry and mushroom. Drunk hot (highly recommended temperature) (My vote 7.2/10). The color is greenish. The olfactory intensity is high, and the olfactory persistence is appreciable. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas are vanilla, white melon, coconut and plum. The first impression of intensity in the mouth is of vigorous sake. The dryness is rather dry. The body is full. The flavor intensity is high, and the persistence is good. The taste is pleasant. The final mouth sensations are of drinkable sake. In the mouth the aroma is that of vanilla, white peach, melon, dried apricot, mushroom, gin, anise, white pepper, umami and white mushrooms.

Bottle at home and a pretty bottle at that nice green label. Unfortunately not the prettiest sake kind of a urine color with nose of alcohol and some melon. Tastes of grainy rice, hint of honey dew, coconut, and like the end of a vodka tonic where it’s watered down with melted ice. Harsh and unrefined palate slightly chalky.

Glass at New Shinmachi Isakaya. Yellowish tint, oily. Crisp citrus, stone fruit.Sweet, fruity, nice orange and apricot flavors. Very rich and fruity. Nice stuff. Much less fragrant than the Juyondai on the same night though.

Glass at an Izakaya. Rather plain nose, some fruit, some alcohol, a bit of rice. Very dry and simple. Flavor also dry, light fruit, alcohol burn. It claims to be super dry, and it is, but this is too dry for me to really appreciate, and as it is undiluted genshu, it burns as well.

Glass poured form a 1.8 liter bottle. Hugely milky and cloudy, pasty, with rice matter. Thick and gooey. Milky vanilla nose, creamy. Full, thick body, vanilla and cream with hot alcohol coming up behind to clean things up a bit. Quite rich. Nice. 1 glass is enough though.
