Description
Surrounded by the 36 peaks of Higashiyama and the Kamo River, the brewery is located in a rich natural setting, overlooking the Kyoto Imperial Palace and Shimogamo Shrine to the west and Daimonji Mountain to the east. While subject to the ravages of time, especially in difficult periods, we never stopped brewing sake even if the quantity was small. The groundwater that flows out of nearby Mt.Hiei is very soft and has a crisp, clear taste. After a long hiatus due to underground construction, the brewery was revived in 2009, with the brewer himself serving as toji (master brewer) and brewing sake with several brewers. We do not aggressively market or sell our sake. Our sake is not only aromatic or dry, but is also characterized by its delicious taste and flavor, which maximizes the "rice flavor" of sweet, sour, dry, bitter, and astringent.

Drank fresh. The color is a hint of yellow. The olfactory intensity is high, and the duration is appreciable. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas find hints of vanilla, melon, white mushrooms, cooked pear, steamed rice and umami. The first impression of intensity in the mouth is of powerful sake. The aroma on the tongue is medium dry. The body is full. The taste is pleasant. In the mouth the aroma is that of vanilla, white peach, dried apricot, mushroom, spring water and melon.

300 ml bottle from their booth at the Yoshida Shrine Fire Festival. Well cloudy white colored but looks not so thick. Yeasty, rice nose, some vanilla and cream. Sweet and full, yeast, vanilla, rice, rice pudding. Rather heavy and full-on nigori.

Poured from the bottle at the 2013 Westin Miyako Kyoto Sake Festa. Very fruity, sweet, and creamy. Full, rich body. Ok acidity to balance. Tingly, peppery finish. Excellent.

Poured from the bottle at the 2013 Westin Miyako Kyoto Sake Festa. Creamy, fizzy body, rice pudding, vanilla. Nose rather faint but flavor solid. Very cloudy and chunky, some bits of rice in it. Sweet and tasty with light spiciness. Refreshing and delicious.
