Description
Our wooden tanks are made from 100-year-old cedar trees in a process refined by Japanese artisans for over 400 years, using techniques that make them incredibly durable, with useful life spans of over 100 years. Most of the products are only fired once to sterilize them. Handcrafted with traditional methods and tools, and aiming for a modern taste, we brew casual daiginjo, sparkling sake, sake in a wine glass, and heated ginjo sake to suit modern tastes, and offer them at their most delicious time of year.

300ml bottle. Cloudy pale yellow-white colour, shortlived white foam head and aroma of rice, booze, citrus. Taste is sweetish and tangy, with rice, citrusy, melon and light grassy notes. Smooth mouthfeel, medium bodied, spritzy carbonation, dry tangy finish. Nicely drinkable.
