Description
Founded in 1784 by Jean Baptiste De Bruin and still a family brewery to this day; known as Brouwerij Schelfaut until 1919, when the name was changed to Brouwerij Bios by Paul Van Steenberge, who became the head of the operation in 1922. Currently operated by his great-grandson Jef Versele (since 1998). Underwent many technical upgrades and expansions since then, most notably in 2017 when new buildings were installed and production capacity was significantly increased.

Bottle. Clear golden amber with a dense white head. Doughy aroma with spices and gentle citrus. Fairly sweet with rich, slightly caught dough. Smooth and malty before a moderately bitter finish. Refined and tasty enough.

Pink head, thick, over clear carmosine beer, leaving fine lace. Cherrydrops, sweet cherry juice, bit rainwater. Sweet cherry, cherrygums, but with a wry, almost tart woody finish. Cherrystones - or the branches included? Dry-out effect! Medium bodied at least, very well-carbonated. The wry finish in the mouth points to better things, all the more's the pity of the syrupy cherryflavour. Txs to Stef!

Bottle. Caramel malt aroma with notes of roasted malt, coffee, toffee, clove and dark fruit. Pours deep red with a large tan head that has excellent retention and lacing. Starts with caramel, roasted malt and dark fruit flavors. Finishes very smooth and malty with coffee, clove and toffee flavors. Excellent.

Bottle shared by Joen. Clear golden color, full sized white head. Aroma amd flavor are malts, a bit yeasty, nicely bitter, more bitterness than I had expected, hayosh / straw a bit. Solid blonde.

0.75l bottle. Opaque copper body with a lasting beige head. Bold sweet and spicy aroma with notes of nutmeg, toffee, raisins, wood, licorice and some red wine. Taste of toffee, wood, raisins, nutmeg, dates, banana, red wine, candi sugar and a hint of floral hops. Long lasting sweet and spicy finish, medium body with a silky texture. Smooth, rich and complex beer. Wow!

Bottle from Le Petit Casino: pours deep gold with whjte head. Aroma is light yeast, plenty of honey, some ambiguous fruitiness. Taste is light bitterness, ample sweetness. Fine, but hardly worth mentioning. That said, its restraint could be copied by third tier American brewpubs when they attempt this style.

Smell-weak to medium, fruits, juice, fermented fruits.
Foam- thin sour tones, malt, acidic feel. Head is quite large, white or light brown in color. Sticks.
Appearance- generic black cap, simple classic label. Clear brown-orange in color.

Taste - weak malt, weak fruits, some sourness, some fermented fruits, some sweetness. Overall sour-sweet, not exactly my type.

33cl Fles, 2018 special edition. Donkerbruine tot zwarte kleur, beige kraag. Port, donker fruit, alcohol, ruikt als een quad en smaakt ook zo, maar dan mierzoet, pruimen, dadels, ik proef niks van een stout in dit bier. Ik was in de stemming voor een zwart gebrand bier en kreeg een mierzoete quad. DNF. Medium body.

This bottle was a volcanic gusher. Murky orange copper with a tall frothy head. Big bright fruits, wood, toffee, bourbon, ripe fruits, honey, a touch of booze. Full bodied. Finish is sweet with fruit, caramel, oak. Very refined and a nice beer. Just wish I didn’t lose a ton of it by gushing.
